This came out so good and when had hot no one will complain as even hubby who is not soo fond of quinoa liked this.

Quinoa casserole recipe a healthy one pot dish perfect for breakfast.

Ingredients
- 1/4 cup quinoa
- 1/4 cup onion finely chopped
- 1/2 cup carrot grated
- 2 tbsp capsicum finely chopped
- 1/4 cup cooked corn
- 1/4 cup grated cheese
- 2 tbsp breadcrumbs
- 2 to 3 tbsp pizza sauce
- 1/3 tsp mixed herbs
- 1/4 tsp pepper powder
- salt to taste
Instructions
- Measure and take quinoa in a bowl, rinse it well.Drain.
- Add 1/2 tsp oil in a sauce pan, add drained quinoa and toast for a minute.Then add 1 cup water and start cooking.Simmer the flame and cook covered for 15-20 mins.
- You will see a small tail coming out and quinoa should have absorbed all the water.After 20 mins switch off and set aside for 10 mins.Then open and fluff it up.
- Heat oil in a pan - add onion saute till transparent, add carrot saute for 2 mins.
- Then add capsicum give a quick saute then add boiled corn.
- Mix well then add required salt,pizza or pasta sauce,mixed herbs and pepper powder.Mix well and cook for 2 mins and switch off.
- Add cooked quinoa to it.Mix well.Add breadcrumbs to it.
- Mix well.Grease a baking tray with butter and add quinoa to it.
- Pat the top well, add shredded cheese preferably mozarella. I had no stock so went ahead with cube cheese and that's the reason why it didn't spread if anyone out there is wondering ;)Bake in preheated oven at 180 deg C for 10 mins grill for the last 2 mins along for a crusty top
Notes
- You can sprinkle breadcrumbs on top before baking too.

For quinoa-casserole-recipe, if i want to omit bread crumps amd cheese ,what will be final result or any other substitute for this two ingredients.
It will be more like vegetable upma 🙂 Breadcrumbs is just for crispness you can skip that but I would recommend adding little cheese atleast
