    Cajun Potatoes the first time I tasted it was at Barbeque Nation(a popular buffet restaurant) and was bowled out by this idea of crisp potaotes in a spiced mayo sauce .It is popularly called as BBQ style Cajun Potatoes .

    About Cajun Potatoes

    Crispy creamy cajun potatoes is one of the most popular items in the restaurant called BBQ Nation. Cajun potatoes use a special mix called cajun spice mix to coat the potatoes which makes this dish flavourful and unique.

    Cajun cuisine is a style of cooking named for the French and Barbequeing is one the cajun cooking methods. Cajun cuisine is sometimes referred to as a ‘rustic cuisine’, meaning that it is based on locally available ingredients and preparation is relatively simple. So I guess its because of the simple available ingredients this dish is named so.

    Cajun Potatoes – My Experience

    The first time we tasted Cajun Potatoes I was admiring amma relishing it even among all other nonveg starters so that moment I decided to recreate it at home. But the time didn’t come for me to try it until I saw the ingredients for cajun potatoes listed in a newspaper. The very next day I tried and we all enjoyed it. And guess what amma said its so good that I love this more than the one we had at the restaurant. What more can I ask for?! Yes it was similar to the one I tasted it at the restaurant and this is undoubtedly one of the best restaurant style dishes I recreated at home in the recent times.

    Cajun Potatoes – Spice Mix Ingredients

    The cajun spice mix includes garlic powder, onion powder,mixed herbs, pepper,chilli flakes, red chilli powder, oregano etc. It is basically the ingredients we have in our pantry except for a very few.

    Cajun Potatoes without Mayonnaise

    If you don’t have mayonnaise you can replace it with fresh cream. Just dilute it a bit using milk.But I highly recommend using mayonnaise to get that perfect restaurant flavour and taste.

    Cajun Potatoes

    Ingredients

    • 25 nos potatoes
    • salt to taste

    For the batter

    • 1/4 cup corn flour
    • 2 tbsp wheat flour You can replace with maida too
    • 1 tbsp rice flour
    • water as needed

    For cajun sauce

    • 1 cup mayonnaise
    • 1 tbsp tomato sauce
    • 1 tsp chilli flakes
    • 1.5 tsp garlic powder
    • 1 tsp mixed herbs
    • 1/2 tsp pepper
    • 1/4 tsp red chilli powder
    • 1/3 to 1/2 cup milk
    • salt to taste

    For garnish:

    • onion finely chopped
    • chilli flakes for garnish
    • mixed herbs for garnish
    • red chilli powder
    • coriander leaves

    Instructions

    • Take around 25 small potatoes rinse in water at least 3-4 times.
    • Rinse well, rub with fingers to remove dirt.
    • Change water and wash well until the water is completely clear. As we are adding potatoes with skin make sure there is no dirt at all.
    • Add to pressure cooker along with salt and water till immersing level.
    • Pressure cook for 2 whistles (in high flame). Switch off, let the pressure release by itself.
    • Check the doneness it should not be mushy but soft when pricked.
    • Place all the potatoes on a chopping board – use a flat base ladle and press it. Do not apply more pressure.
    • Repeat to finish for all potatoes, set aside.
    • To a mixing bowl add corn flour, wheat flour and rice flour. Mix well first.
    • Then add water little by little to form a batter.
    • The batter should form a slightly running batter.
    • Now dip each potato to the batter coat with batter(a thin coating would be enough).
    • Drip excess batter using a fork.
    • Shallow fry until golden and crisp. Add in batches and fry only while serving. Repeat to finish, set aside.
    • Now to another mixing bowl add all the ingredients listed under 'for cajun sauce' and mix well.
    • Then add milk little by little. Add little by little mix well until the sauce is in pourable consistency. Creamy and pourable sauce ready.
    • Now on the serving plate place the crisp potatoes.
    • Pour generous sauce over it.
    • Add raw onion, mixed herbs, chilli flakes, red chilli powder and finally garnish with coriander leaves.
    • Barbeque style cajun potatoes ready to serve. Enjoy!

    How to make Cajun Potatoes

    Preparing potatoes

    1.Take around 25 small potatoes rinse in water atleast 3-4 times.

    3.Change water and wash well until the water is completely clear.As we are adding potatoes with skin make sure ther is no dirt at all.

    4.Add to pressure cooker along with salt and water till immersing level.

    5.Pressure cook for 2 whistles(in high flame). Switch off, let the pressure release by itself.

    7.Place all the potatoes on a chopping borad – use a flat base laddle and press it.Do not apply more pressure.

    9.To a mixing bowl add cornflour,wheat flour and rice flour. You can replace wheat flour with white flour(maida).

    Variations & Alternates

    • I have given the shallow frying method for potatoes. You can make : cajun potatoes baked or cajun potatoes  in air fryer too. Else you can deep fry them too.
    • The recipe is with wheat flour, but you can replace it with maida too.
    • I have used pressure cooker for cooking potatoes, you can use Instant pot too set to pressure cook mode for 5 mins.
    • Instead of baby potatoes you can cut and use the regular potatoes too.

    Serving & Storing Suggestions

    • Always assemble onbly while serving else it will become soggy. If you are planning this for parties keep the fried potatoes and the cajun spice mix ready then assemble while serving time.
    • I wouldn’t recommend storing it as it is meant to be had fresh. However you can prepare the cajun mix, seasoning ready and store it in fridge which keeps well for 2 days. You can prepare the flour batter seperately, cook potatoes and store these in fridge too. And while serving you can fry the potatoes, add the cajun mix and serve it. This way its easy and saves time.
