    The first time I tasted Cajun Potatoes was at Barbeque Nation(a popular buffet restaurant) and was bowled out by this idea of crisp potatoes in a spiced mayo sauce. It is popularly called as BBQ style Cajun Potatoes.

    About Cajun Potatoes

    Cajun Potatoes is one of the most popular starter in a restaurant named ‘Barbeque Nation’. Cajun potatoes use a special sauce called cajun spiced sauce made using mayonnaise and spices which include garlic powder, chili powder, chili flakes, mixed herbs, pepper powder etc.

    Baby potatoes are coated with a flour batter deep fried until crisp then the Cajun spiced sauce is added on top to coat the potatoes which makes this dish flavorful and unique. The toppings are sprinkled and enjoyed as a starter.

    Cajun cuisine is a style of cooking named for the French and Barbecuing is one the cajun cooking methods. Cajun cuisine is sometimes referred to as a ‘rustic cuisine’, meaning that it is based on locally available ingredients and preparation is relatively simple. So I guess it is because of the simple available ingredients this dish is named so.

    The first time when we tasted Cajun Potatoes amma was relishing it even among all other non-veg starters so that moment I decided to recreate it at home. But the time didn’t come for me to try it until I saw the ingredients for cajun potatoes listed in a newspaper.

    The very next day I tried and we all enjoyed it. And guess what amma said its so good that I love this more than the one we had at the restaurant. What more can I ask for?! Yes it was similar to the one I tasted it at the restaurant and this is undoubtedly one of the best restaurant style dishes I recreated at home in the recent times.

    Cajun Potatoes Ingredients

    • Baby Potato – Choose small sized baby potatoes that are firm. Bite sized pieces are best for serving as such else you need to cut them into half and serve it.
    • Mayonnaise – Use plain mayonnaise not flavored ones.
    • Milk – Use boiled, cooled milk along with mayonnaise to thin down the sauce.
    • Flour batter – Cornflour, plain flour and rice flour along with salt is used to make the flour batter. The batter should be slightly runny.
    • Spices – Chili flakes, garlic powder, chili powder, mixed herbs, pepper powder are used.
    • Topping – Raw chopped onion along with chili powder, chili flakes and coriander leaves are sprinkled and added.

    Cajun Potatoes – Spice Mix Ingredients

    The cajun spice mix includes these ingredients :

    • garlic powder
    • mixed herbs
    • pepper powder
    • chili flakes
    • red chili powder

    Topping

    The fried potatoes are first placed on the plate then prepared cajun sauce is poured generously. Then it is topped with red chili powder, raw onion and coriander leaves.

    How to make Cajun Potatoes Step by Step

    Preparing potatoes

    1.Take around 20-25 small potatoes rinse in water at least 3-4 times.

    2.Rinse well, rub with fingers to remove dirt.

    3.Change water and wash well until the water is completely clear. As we are adding potatoes with skin make sure there is no dirt at all.

    4.Add to pressure cooker along with salt and water till immersing level.

    5.Pressure cook for 2 whistles(in high flame). Switch off, let the pressure release by itself.

    6.Check if it is done – it should not be mushy but soft when pricked.

    7.Place all the potatoes on a chopping board – use a flat base ladle and press it. Do not apply more pressure.

    8.Repeat to finish for all potatoes, Set aside.

    Preparing flour batter

    9.To a mixing bowl add 1/4 cup cornflour, 2 tablespoon wheat flour and 1 tablespoon rice flour, salt to taste. You can replace wheat flour with white flour(maida) too.

    10.Mix well first.

    11.Then add water little by little to form a batter.

    12.The batter should be slightly runny.

    13.Now dip each potato to the batter coat with batter(a thin coating would be enough).

    14.Drip excess batter using a fork.

    Frying potatoes

    15.Shallow fry until golden and crisp in medium high flame. You can deep fry them too. Add in batches and fry only while serving. Double fry them if you want it super crispy.

    16.Repeat to finish, set aside.

    Preparing Cajun Spice Mix

    17.Now to another mixing bowl add

    • 1 cup mayonnaise
    • 1 tablespoon tomato sauce
    • 1 teaspoon chili flakes
    • 1 and 1/2 teaspoon garlic powder
    • 1 teaspoon mixed herbs
    • 1/2 teaspoon pepper
    • 1/4 teaspoon red chilli powder
    • 1/3 to 1/2 cup milk
    • salt to taste

    Mix it well.

    18.Then add milk little by little. You may need 1/2 cup to 1/3 cup adjust according to the consistency.

    19.Add little by little mix well until the sauce is in pour-able consistency.

    20.Creamy and pour-able sauce.

    Serving

    21.To the serving plate, place all the fried potatoes.

    22.Pour generous sauce over it.

    23.Add raw onion, mixed herbs, chili flakes,red chili powder and finally garnish with coriander leaves and serve immediately.

    Expert Tips

    • Always fry in batches.The potatoes should be crisp. You can either shallow fry or deep fry them.
    • Don’t make a thick batter and coating, the coating should be thin on the potatoes.
    • You can either add onion powder in the sauce or raw onion while serving.
    • Garlic powder is a must in this recipe so don’t skip it.
    • Adjust spice powders according to your taste and preference.
    • I have not given the topping measures, it is your preference.

    Variations & Alternates

    • I have given the shallow frying method for potatoes. You can make : cajun potatoes baked or cajun potatoes in air fryer too. Else you can deep fry them too.
    • The recipe is with wheat flour, but you can replace it with maida too.
    • I have used pressure cooker for cooking potatoes, you can use Instant pot too set to pressure cook mode for 5 mins and let it pressure release manually.
    • Instead of baby potatoes you can cut and use the regular potatoes too.

    Serving & Storage

    • Always assemble only while serving else it will become soggy. If you are planning this for parties keep the fried potatoes and the cajun spice mix ready then assemble while serving time.
    • I wouldn’t recommend storing it as it is meant to be had fresh. However you can prepare the cajun mix, seasoning ready and store it in fridge which keeps well for 2 days. You can prepare the flour batter separately, cook potatoes and store these in fridge too. And while serving you can fry the potatoes, add the cajun mix and serve it. This way its easy and saves time.

    FAQS

    1.How to make Cajun Potatoes?

    First potatoes are dipped in a cornflour,wheat flour, rice flour slurry, fried until crisp. Then a cajun spice mix is made along with mayonnaise and this is added a dripping sauce over the fried potatoes.This sauce is called Cajun Mayonnaise Spice dressing. Finally season it with onion, coriander leaves and seasonings / spices.

    2.Can I make Cajun potatoes without Mayonnaise?

    Mayonnaise is one the main ingredient in cajun dressing however if you want to avoid it : Just dilute fresh cream with milk and use it replacing mayo. But sure the taste varies, to get the perfect restaurant taste mayonnaise is needed.

    Ingredients

    • 25 potatoes
    • salt to taste

    For the batter

    • 1/4 cup corn flour
    • 2 tablespoon wheat flour You can replace with maida too

    • 1 cup mayonnaise
    • 1 tablespoon tomato sauce

    • 1 and 1/2 teaspoon garlic powder
    • 1 teaspoon mixed herbs
    • 1/2 teaspoon pepper
    • 1/4 teaspoon red chilli powder
    • 1/3 to 1/2 cup milk
    • salt to taste

    • onion finely chopped
    • chilli flakes for garnish
    • mixed herbs for garnish
    • red chilli powder
    • coriander leaves
