    Crispy Corn is a delicious, spicy corn made by frying corn kernels coated with flour and then tossing it with spices. Crispy corn is a popular appetizer at Barbeque Nation which is recreated for cooking at home easily & quickly. How to make Crispy Corn is explained in this post with step by step pictures & video.

    Crispy Corn Recipe is a simple & easy recipe that can be cooked as a snack for snack time or a starter for a grand lunch or dinner. Crispy corn can be flavoured in multiple ways and enjoyed in different tastes each time.

    About Crispy Corn

    Crispy corn is a wonderful snack and an appetizer that is liked by all for its taste and flavour. It is a good idea to make it for family get-together, grand lunch and special occasions like kids birthday, kids parties.

    Corn is rich in vitamins and dietary fibre which is good for eyes, heart & digestive health. Corn is also gluten free, fat free and sodium free. Crispy corn has to eaten in moderation as its starchiness might spike blood sugar level if eaten in excess.

    Crispy Corn Recipe

    I have heard about this crispy corn from few of my friends and finally got to taste it at BBQ nation and we all loved it, so wanted to recreate the same at home too. I am not sure of the ingredients they use but this is what I tried which came almost similar to the one I tasted. Do try this and enjoy at home – both kids and elders at home will love it for sure & ask for a repeat.

    Crispy Corn – Safety on!

    Corn tends to think it is Pop Corn getting cooked and may try to pop out of the pan. So be cautious to cook covered with a lid or cover for first few minutes. Lid can be removed after sometime so that kernels which is sticking together are separated and cooked until golden brown.

    Crispy Corn Ingredients

    • Corn:  It is easy to make this recipe if we buy corn kernels as such as it reduces the effort of separating kernels from the cob. You can use frozen or fresh kernels as available. Thaw / defrost if it is frozen. If kernels are not available, get cobs and separate the kernels by extracting it out manually. 
    • Corn Flour & Rice Flour: Corn Flour & Rice Flour are the agents which make the corn crispy. They are available in stores and can be homemade too. Alternatively you can use all-purpose flour / maida instead of rice flour or corn flour or in addition to both these flour.
    • Spice Powders: Spice powders determine the taste, flavour & spiciness of crispy corn. I have used chat masala, red chilli powder, pepper powder and cumin powder. Feel free to add your choice of seasonings to the crispy corn.
    • Oil : Use refined oil available at stores. For a healthier option, you can use ground sesame / groundnut oil.

    Crispy Corn | Barbeque Nation Style Crispy Corn

    Crispy Corn is a delicious, spicy corn made by frying corn kernels coated with flour and then tossing it with spices. Crispy Corn is a perfect starter for parties and could be relished as evening tea time healthy snack.

    Ingredients

    • 1 cup corn
    • 2 cups water
    • 2 tablespoon corn flour
    • 2 tablespoon rice flour
    • 2 tablespoon onion chopped finely
    • 1 tablespoon coriander leaves chopped finely
    • 1 teaspoon lemon juice
    • salt to taste
    • oil to deep fry

    Spice mix:

    • 1/4 teaspoon red chilli powder
    • 1/4 teaspoon chat masala powder
    • 1/8 teaspoon pepper powder
    • 1/3 teaspoon cumin powder
    • salt to taste

    Instructions

    • To a bowl add all the spice powders along with salt.
    • Mix well and set aside.
    • To a pan add water, corn and required salt boil in medium high flame for 3 mins.
    • Strain then rinse it with cold water. The moisture should be there but not too watery so strain completely then immediately transfer to a bowl.
    • Add corn flour and rice flour, mix well with a fork. The mixture should be dry and not sticky.
    • Toss it well for even mixing. Transfer to a colander, shake to remove excess flour.
    • Slightly spread it out so that it doesn’t stick together.
    • Heat oil in a pan – to check first add one corn if it rises immediately then its perfect.
    • Add a small batch of flour coated corn, keep covered for few seconds.
    • Corn may pop out initially so cook covered for just few seconds. Do not cook covered for more time then water droplets will start forming then will fall into oil and start to splutter.
    • While frying be at a safe distance or keep it covered.
    • Fry until crisp. Remove and drain excess oil. Repeat with next batch.
    • Transfer fried corn to a mixing bowl, add the spice mix, chopped onion, coriander leaves and lemon juice.
    • Give a quick toss and serve Crispy Corn immediately.

    • Moisture should be there in corn but not too watery. If its watery then the flour will become sticky. The corn mixture should be dry.
    • Corn may pop out so be at a safe distance incase if you are open cooking it.

    How to make Crispy Corn

    Preparing spice mix

    1.To a bowl add all the spice powders along with salt.

    2.Mix well and set aside.

    Cooking corn

    3.To a pan add water, corn and required salt boil in medium high flame for 3 mins.

    4.Strain then rinse it with cold water.The moisture should be there but not too watery so strain completely then immediately transfer to a bowl.

    Coating corn with flour

    5.Add corn flour and rice flour, mix well with a fork.The mixture should be dry and not sticky.

    6.Toss it well for even mixing.

    7.Transfer to a colander, shake to remove excess flour.

    8.Slightly spread it out so that it doesn’t stick together.

    Deep frying corn

    9.Heat oil in a pan – to check first add one corn if it rises immediately then its perfect.

    10.Add a small batch of flour coated corn, keep covered for few seconds.

    11.Corn may pop out initially so cook covered for just few seconds.Do not cook covered for more time then water droplets will start forming then will fall into oil and start to splutter.

    12.While frying be at a safe distance or keep it covered.

    13.Fry until crisp.

    14.Remove and drain excess oil.Repeat with next batch.

    Mixing with Spices

    15.Transfer fried corn to a mixing bowl, add the spice mix,chopped onion,coriander leaves and lemon juice.

    16.Add lemon juice.

    17.Give a quick toss and serve immediately.

    Expert Tips

    • Strain the water completely from corn to avoid the mixture getting lumpy. 
    • Corn may pop out so be at a safe distance incase if you are open cooking it.
    • Ensure the oil is hot before frying
    • Shake excess floor so that they do not get separated in oil while frying.

    Seasonings and spices can be varied to try Crispy Corn in different taste & style

    • Add oregano, basil, chilli flakes for an Italian style Crispy Corn
    • Add finely chopped spring onion, minced & fried garlic, soy sauce, vinegar for Chinese style Crispy Corn
    • Add Peri Peri Masala or any seasoning of your choice & liking
    • You can add an egg to the flour to enjoy egged crispy corn.

    Yes you can use a mix of rice flour and maida / all purpose flour if you do not have corn flour.

    5.What should I do if the coating has become watery?

    Add some more flour and shake the excess flour out so that we end up in dry coating of corn. If you end up in too much of excess flour, you can coat them with finely chopped onion and make crispy onion pakoras!

      Thanks a ton for this recipe. My husband loves it from Barbeque nation and the first thing he asked me to make after I got the air fryer was this. Followed your recipe. It came out really good. Crispy corn got vanished minutes after I finished making it.
