    Mango Pudding

    Mango Pudding is a delicious dessert made with fresh mangoes, agar agar, milk and sugar. This mango pudding can be made quickly using easily available ingredients in your pantry.

    Agar agar is easily available online now. Agar Agar is a jelly like substance which is a setting agent for jellies and puddings. It is a perfect vegetarian, vegan substitute for gelatin.

    Mango Pudding is a silky smooth dessert loved by all. It just uses very few ingredients and the end result is pure delight. Also easy and quick to make and sets magical with agar agar.

    Had been using agar agar strands since years and it has been a successful journey. With this magical ingredient puddings and jellies can be made in no time and can be enjoyed by vegetarians too.

    Mango Pudding Vegan

    To make this Mango Pudding Recipe Vegan first increase water quantity to 3/4 cup instead of 1/2 cup. Then replace 1/2 cup milk with 1/2 cup coconut milk. But do not boil coconut milk add it after the mango puree, switch off and mix.

    Agar Agar – China Grass

    Agar Agar comes in 2 forms and I have used both. Agar agar strands are easily available in supermarkets but agar agar powder I have found only online as its not readily available in my place. Agar Agar is also known as China Grass.

    • Agar Agar Strands – Strands are good but they need to be cut down into small bits or grind to a coarse mixture for it to dissolve easily, also comes in gram measures so a bit difficult to measure in tablespoon.
    • Agar Agar Powder – Powder easily dissolves and easy to measure too.

    Mango Pudding Ingredients

    • Mangoes – Fresh juicy mango varieties are recommended for this pudding. I used a combination of Alphonso and Banganapalli varieties for perfect taste and color.
    • Milk – Use fresh boiled milk for this recipe preferably full cream milk for a richer pudding.
    • Agar Agar – You can either use agar agar strands or agar agar powder but measure accordingly.
    • Sweetener – I used regular white sugar and I recommend it to enjoy the pudding to the fullest.

    How to make Mango Pudding Step by Step

    1.To a mixer jar add 2 nos roughly chopped mangoes. I used 1 Alphonso and 1 Banganapalli.

    2.Grind it to a smooth pulp. Do not add water. Measure 1 cup mango pulp and set aside.

    3.To a sauce pan add 1/2 cup water.

    4.Add 1 cup milk(boiled).

    5.Let it start to boil.

    6.Add 2 teaspoon agar agar powder.

    7.Give a quick whisk so that agar agar powder dissolves well.

    8.Add 1/4 cup sugar. Add 2 tablespoon sugar extra if your mangoes are not sweet.

    9.Whisk well until sugar is completely dissolved.

    10.Now add 1 cup mango pulp.

    11.Whisk well until well combined.

    12.The mango and milk mixture should be combined well. Switch off. Do not cook for more than 2 minutes after adding mango pulp.

    13.Immediately pour to a strainer.

    14.Strain and remove remains if any. This straining is done to make sure there are no lumps.

    15.Now pour into pudding moulds or any small cups. You can use steel cups too.

    16.You can either set this in room temperature or in fridge. Set it for an hour. I usually set it fridge as we love our desserts cold.

    17. After an hour release the edges. You can even dip the mold bottom in warm water to unmold.

    18.Invert and remove the mold gently.

    19.Garnish with chopped mangoes and a small sprig of mint leaves.

    20.Release the edges by running a knife at the edges.

    21.Invert and de-mold.

    22.Garnish with fresh mangoes chopped and a sprig of mint leaves. Serve!

    Expert Tips

    • I used Alphonso mangoes and Banganapalli combo, you can use any fiber less mango variety.
    • I used silicone molds for easy de-molding but you can set puddings in any container steel or glass.
    • Adjust sugar quantity according to the sweetness of mangoes.
    • Once china grass gets dissolved do not delay add sugar and mango pulp as soon as possible else it will start to thicken.
    • Agar agar puddings sets beautifully in room temperature itself but I prefer to chill it for a while to serve Chilled Mango Pudding.
    • As I chilled just for 30 mins and it got set by that time, also served it soon after clicking I didn’t cover the pudding. But if you are planning to store the pudding in fridge for a day or more cling wrap or cover with foil and store.

    Serving & Storage

    Mango Pudding can be served with fresh chopped mangoes or can be served as such too. Mango Pudding keeps well in room temperature for 1 day and 2 days in fridge. This pudding can be made well ahead and stored in fridge for parties and get together.

    1.Is this Mango Pudding Vegan, Vegetarian?

      Thanks for the simple recipe. Should the mango purse be added to disdolved agar agar solution when it is still warm? Also does the recipe work well using stevia or palm sugar or date durupayogam instead of sugar ?

        yes mango puree should be added to china grass mixture only.Not sure with palm sugar but will work with cane sugar

      Hi I tried this today and it did not set because I didn’t know how to measure 5gms. Please give spoon measurement for agar strands.

        Spoon measures will not work for agar agar we get a pack of 10 gms here…you can buy like that
