Spaghetti was new to me until I made Aglio Olio and that was the first time I tasted spaghetti and totally loved it. I wanted to try a simple and quick spaghetti stir fry recipe which will be apt for breakfast and this one is wholesome and satisfying with all the goodness of veggies. I used the pack of olives and spaghetti I got as a gift hamper from Good Food magazine for featuring my cilantro almond pesto pasta as the reader recipe of the month 🙂
This is quick and easy for breakfast, you can even pack it for your kids lunch box, they will sure love it! You can cut the veggies and keep it ready the previous day itself which makes it even more quick.
Spaghetti Stir Fry Recipe – Ingredients
Serves : 2Cooking & Preparation Time: 30 mins
Spaghetti – 150 gms(I used whole wheat)
Cabbage – 1/4 cup chopped lengthwise
Carrot – 2 small chopped lengthwise
Capsicum – 1/2 chopped lengthwise
Olives – 10 (optional)
Garlic – 2 tsp minced
Soya Sauce – 1/2 tsp
Black Pepper powder – 1 tsp
Mixed Herbs / Italian Seasoning – 1/2 tsp
Olive Oil – 1 tbsp + 1 tsp
Salt – to taste
Water – as required
Method:
1.Boil water, add the spaghetti along with little salt and a tsp of oil. Cook until soft. Drain water, wash it under cold water and set aside.
2.Get all your veggies ready. Heat oil – saute garlic until golden brown then add carrot and cabbage. Fry until it shrinks and raw smell leaves.
3.Then add capsicum and olives, saute for 2mins. Then add soya sauce keeping flame in high.Keep sitrring continuously.
4.Lower the flame and saute the veggies along with black pepper powder, italian seasoning for 2mins.Then add cooked spaghetti and give a quick toss until the veggies are evenly coated with spaghetti.Switch off.
Serve hot with tomato sauce or you can have it as such as its wholesome.
My Notes:
- Dont add more soya sauce than mentioned amount as soya sauce will be overpowerful.
- You can even add spring onions as we do for fried rice.
- Veggies is totally of your choice.
- I had salt pickled olives so used it.You can use fresh or tinned olives too.
- I used whole wheat spaghetti, you can use any of your choice.
Nice recipe and clicks Sharmilee. The note about Soya sauce is very true.

Actually, Spaghetti is my favorite food because it is easy to cook and to prepare. This is a very different type of spaghetti because it has vegetable. And I think this is special because of that vegetable given here. I will try to cook this so that I can know the taste of it. Keep sharing!.
