    About Spicy Diamond Cuts

    Spicy Diamond Cuts are made by making a dough using flour,spices then rolling the dough flat then cutting them in diamond shapes and deep frying it until crisp. These diamond cuts are very easy to make at home that even beginners can try.

    Spicy Diamonds are super easy to make homemade snack. This can be prepared for evening snack along with a cups of coffee or tea. This is a very versatile snack as you can the spices and herbs can be customized according to your liking.

    Few years back I remember having these as a part of the diwali snacks my neighbor gave and it was too addictive and the flavors were amazing! Ajwain flavor is the best in these savory or spicy diamond cuts.

    I have tried this recipe completely with wheat flour and it tastes good too. You can even use half of wheat flour and half of maida. This is a very flavorful snack that you can make in just few minutes.

    Spicy Diamond Cuts Ingredients

    • Flour - Traditionally maida is used for diamond cuts so I used the same. But you can replace it with half and half of wheat flour and maida too.
    • Spices - I have used ajwain and sesame seeds. Alternatively you can add cumin seeds, curry leaves, garlic paste etc.
    • Spice powders - Turmeric powder and red chili powder is used here.
    • Ghee - Ghee adds a great texture to the biscuits so do not skip it. It adds a melt in the mouth like texture.
    • Oil - Use any cooking oil for deep frying or peanut oil.
    • Salt - Salt is added for taste.

    Cutter for Diamond Cuts

    A specially designed cutter is used for making diamond cuts but you can very well use your pizza cutter or a normal knife to make this. The cutter has one side spoon and other side a wheel with designed edges, you can see that in my step wise pictures, now its widely available in markets which can be used for somas too.

    First cut vertically then cut horizontally to make diamonds like this. While separating be gently and gather them, it will easily separate by itself. Make sure the cutter you use is sharp enough.

    You can use a sharp knife too if you don't have a pizza cutter or diamond cutter. If the dough is not sticky the diamonds will easily separate. Always sprinkle flour while rolling the discs.

    How to make Spicy Diamond Cuts Step by Step

    1.To a mixing bowl add 1 cup flour along with salt to taste, ¼ teaspoon turmeric powder, 1 teaspoon red chili powder, ½ teaspoon black sesame seeds, ½ teaspoon ajwain and 1 tablespoon ghee.

    2.Mix this well first until ghee is evenly distributed.

    3.Add water little by little.

    4.Start kneading.

    5.Knead to a soft non sticky dough like this.

    6.Keep it covered for 10 - 15 minutes.

    7.After 10 minutes knead it once again.

    8.Roll into small balls and flatten it slightly.

    9.Dust flour place it and sprinkle little more flour.

    10.Roll into slightly thin disc like chapathi.

    11.It should be slightly thin like this.

    12.First cut vertically using the diamond cutter or pizza cutter.

    13.Now cut horizontally to get diamonds like this.

    14.Now all cut and ready.

    15.Separate them. Do not worry if it sticks, when we fry in oil it gets separated easily.

    16.Heat oil - check by adding a small piece, it it comes up immediately then oil is ready.

    17.Add few at a time.

    18.Once it rises up flip over to fry evenly.

    19.Fry until reddish golden color and bubbles stops.

    20.Drain excess oil and remove using a ladle. Repeat to finish.

    Cool down then store in airtight container.

    Expert Tips

    • You can add 2 garlic cloves along with 4 red chilies, grind to a fine paste and add it too. In that case skip red chili powder. Instead you can even add 1 teaspoon ginger garlic paste.
    • If you don't want the biscuits to puff up then prick holes with a fork. But I didn't prick as I love to bite the puffed up biscuits.
    • You can even replace ajwain with cumin seeds.
    • You can even use a sharp metal spatula to separate and gather the diamonds.
    • After frying the biscuits you can add ½ teaspoon chat masala powder and toss it for a zingy taste.
    • You can even use half and half of wheat and maida flour.
    • Always keep an eye while adding water.
    • The dough has to be stiff but soft.

    Serving & Storage

    Diamond cuts keeps well in room temperature for about 10-15 days. Make sure you store in an airtight container.

    1.Can I make diamond cuts without the cutter?

    Yes you can make diamond cuts without using the cutter, you can use a sharp knife to cut diamonds too.

    2.My dough is sticky, what to do?

    Add little more flour and knead it to a non sticky dough.If it sticks while rolling dust flour generously.

    3.Can I replace maida with wheat flour?

    Yes you can replace maida with wheat flour either completely or half and half.

    4.What can I replace ghee with?

    You can replace ghee with hot oil or melted butter. But the texture sure varies for butter and oil.

    5.What oil can I use for deep frying?

    You can use refined oil or peanut oil or any cooking oil for deep frying.

      Hello sharmille.. I have been closely following your blog and I like ur recipes very much... I tried making these biscuits at home but they dint come out crispy. Since I intend to try it again please guide me as to what may have gone this time.

        If the diamonds are thick then it might turn out soft....Also when butter is reduced it will not be crispy
