Vegetable stew recipe a kerala special sidedish for idiyappam,aapam made with a combination of vegetables simmered in coconut milk sauce.

Vegetable stew recipe with step by step pictures and video.Vegetable stew is a popular side dish for aapam, idiyappam etc.It is one of the staples in Kerala for breakfast or dinner.

I got this recipe from my neighbour and tried it.The mild sweetness in the curry from the coconut milk and veggies is the highlight of this stew, we all loved it a lot.This is a very easy and rich sidedish to be served with aapam and idiyappam.

What is a stew?

Stew is a combination of vegetables / meat cooked in a liquid simmer in low heat.The cooking liquid varies it can be milk or coconut milk or just vegetable stock etc.

What goes with vegetable stew?

  • Traditionally vegetable stew is had with appam / idiyappam .
  • But you can have even have it with crusty toasted bread too.

How to thicken vegetable stew?

Usually stew is a bit runny but still if you want to thicken it a bit then here are few ways:

  • Adding cashew paste thickens the stew.
  • You can even add rice flour mixed with water to the curry to thicken it a bit more.
  • Add more of thick coconut milk, less of water and thin cocount milk.

Variations:

  • The combination of veggies is upto you but usually Kerala stew has these combination of veggies.
  • Alternatively along with cashews add a tsp of poppy seeds,green chillies and whole spice like cinnamon,cardamom,cloves and grind it to a paste, then add it.
  • Ypu can even cook vegetables in thin coconut milk but make its very thin else it will start splitting.
  • You can add a pinch of turmeric powder too, I wanted my stew to be white in color so skipped it.

Ingredients

  • 1 big sized onion sliced thin
  • 1/4 cup potatoes cut into small cubes
  • 1/4 cup carrot cut into small cubes
  • 1/4 cup beans cut 1 inch long
  • 1/4 cup green peas
  • 1/4 cup cauliflower cut into small florets
  • 10 nos cashews
  • 1 cup thin coconut milk
  • 1 cup thick coconut milk
  • few nos curry leaves
  • 1 tsp coconut oil
  • 1 cup water
  • salt to taste

To temper:

  • 1 tsp coconut oil
  • one 1 inch cinnamon
  • 2 nos cloves
  • 2 nos cardamom
  • 1 tsp ginger finely chopped
  • few nos curry leaves
  • 1 no green chilli slitted

Instructions

  • Heat oil in a pan - add the items listed under to temper.Then add onion along with salt, give a quick saute until onion turns transparent.
  • Add carrot,potato,beans,peas and cauliflower saute for 2 mins.Then add 1 cup water,give a quick mix.
  • Cook covered until the veggies turn soft not too mushy.At this stage simmer and add thin coconut milk.
  • Soak cashews in water for few mins and grind it to a fine paste and add it.Mix well then mash the veggies a little for it to blend with the coconut milk.Simmer for 2 mins.
  • Switch off, add thick coconut along with curry leaves and coconut oil.Keep covered until serving time to retain flavours.

Notes

  • Always be careful while adding coconut milk, simmer and add.
  • Do not overcook vegetables as the veggies cook again in coconut milk also.
  • While mashing mash it gently do not overdo.

  2. Add carrot,potato,beans,peas and cauliflower saute for 2 mins.Then add 1 cup water,give a quick mix.
  3. Cook covered until the veggies turn soft not too mushy.At this stage simmer and add thin coconut milk.
  4. Soak cashews in water for few mins and grind it to a fine paste and add it.Mix well then mash the veggies a little for it to blend with the coconut milk.Simmer for 2 mins.
  5. Switch off, add thick coconut along with curry leaves and coconut oil.Keep covered until serving time to retain flavours.

Serve hot with idiyappam /aapam!

My tips while making vegetable stew:

  • Always be careful while adding coconut milk, simmer and add.
  • Do not overcook vegetables as the veggies cook again in coconut milk also.
  • While mashing mash it gently do not overdo.
