Chicken with pasta is a great combination that too loaded with Indian masala the flavor is soo good. I am not fond of pasta but kids love it. I can have pasta with Indian flavors once in a while and this recipe I created to satisfy my taste buds but all loved it including the kids.

About Chicken Pasta
Chicken Pasta is made by cooking macaroni pasta with chicken, tempered with spices and loaded with Indian masala flavors. The freshly grind masala gives this pasta a unique taste and I am sure you will love it once you taste it. Do try and enjoy this flavorful and aromatic chicken pasta.
This chicken pasta is just my attempt to create Indian style masala loaded pasta. I love spicy pasta recipes and this one was perfect for my taste buds. It was spicy with a burst of flavors, yum breakfast!

Chicken Pasta Ingredients
- Pasta – You can use any variety of pasta like macaroni, penne, fussilli etc. I have used macaroni pasta variety.
- Chicken– Use chicken breast which is best for this pasta.
- Spice powders – Indian spice powders like red chilli powder, garam masala powders are used.
- Masala paste – A special paste is made by roasting coriander seeds, pepper, red chilies, garlic, tomato and coconut.
- Tempering – A basic tempering is made using oil, mustard seeds and curry leaves.
- Oil – Olive oil is preferred for this recipe however you can use regular cooking oil too.

How to make Chicken Pasta Step by Step
1.Boil water, add pasta along with 1/2 teaspoon oil, cook until pasta becomes soft yet crunchy enough to bite. Drain water and set the pasta aside. Heat a pan with oil roast the ingredients listed under ‘to roast and grind’.

2.Add coconut and tomato after the spices are roasted well, roast the mixture till golden brown and wait till raw smell of tomatoes leave, Switch and cool down. Then transfer it to a mixer.

3.Grind it to a fine paste with little water. Heat oil in a pan – add items listed under ‘to temper’ let it splutter. Then add chicken pieces and sauté till color changes, then add the masala paste along with red chili and garam masala powders along with required salt. Sauté the masalas for 3 minutes.

4.Then add 1/3 cup of water and cook covered till the chicken pieces becomes soft. Then let it boil till the sauce becomes slightly thick.

5.Now add cooked pasta and toss it well. If it becomes very dry then sprinkle little water and then mix well for the sauce to coat well with the pasta. Garnish with coriander leaves and switch off.

Serve hot!

Expert Tips
- If you want add 1 big onion chopped finely and sauté after tempering.
- This is little spicy so adjust spice level according to your taste buds.
- Don’t make the sauce too thick then it will be very dry and will not coat the pasta. The pasta with the masalas should be juicy and not dry.
- Cut chicken into small bite sized pieces so that it gets cooked faster and also the masalas easily blend with it.
- Cooking chicken along with the masalas gives a nice flavor and juiciness to the chicken and chicken flavor to the pasta.
- If you are cooking chicken separately then use chicken stock to cook pasta.
- I used macaroni pasta variety, you can choose your favorite.
Serving and Storage
- Serve it as such hot or serve it along with a toasted bread.
- I would recommend to consume it fresh. If you want to store you can cook pasta make the sauce and keep both separately store in fridge. When you want to serve you can toss both and serve hot.

Chicken Pasta Recipe
Ingredients
- 1 cup pasta I used macroni pasta variety
- 100 grams chicken
- 1/4 teaspoon red chilli powder
- 1/4 teaspoon garam masala powder
- 2 teaspoon coriander leaves finely chopped
- salt to taste
