    Chaas is a simple refreshing drink made with curd and little spices. It is served chilled and quite popular during summer days. The taste is mildly tangy and slightly salty, and it feels very cooling for body. Many people drink this after meals to help digestion and feel light in the stomach.

    This recipe is very easy and it has only few ingredients. You can prepare it at home in few minutes without any difficulty. It is a better option than packed cool drinks because it is natural and made fresh. Chaas keeps you hydrated in heat and it does not feel heavy. With simple tempering, it gets good flavor without much work.

    About Chaas

    Salted Chaas is nothing but a simple buttermilk with just salt without much flavouring and one of the most popular drinks during summer. I love to have it in midday after the cooking is over and when I feel tired as its so refreshing and a great thirst quencher.

    Chaas, it is also called salted buttermilk in many places. This recipe is a traditional Indian drink made by blending curd with water and simple seasoning. It is made in many homes during summer season. The recipe has thin and smooth texture, not thick like lassi and heavy.

    The flavor is slightly sour from curd and balanced with salt and roasted jeera powder. Black salt gives little earthy taste which makes the drink more refreshing. Coriander leaves add mild herbal flavor and fresh smell. The tempering of jeera in oil gives warm taste and it lifts the overall flavor.

    You can also try variations in this recipe according to your liking, you can add crushed ginger, green chilli or curry leaves for more spice. You can try mint leaves for extra cooling taste. You can just adjust the thickness by adding more or less water according to your preference.

    I usually make this recipe in afternoon when weather is hot. It gives instant freshness and cool feeling inside.

    Chaas Ingredients

    • Curd / yogurt - I added thick chilled curd for creamy texture and tangy taste. You can use homemade curd or even store bought yogurt if you likes.
    • Roasted jeera powder - I just added this for enhance the taste and it also help in digestion.
    • Black salt - I add it for unique flavor. It gives slight chatpata taste and makes chaas more refreshing and tasty.
    • Coriander leaves - I added this for fresh aroma. It add light herbal flavor and makes it looks colorful. You can add mint leaves instead also if you prefer.
    • Jeera - I have used this for tempering in oil. It give strong aroma and adds extra flavor on top.
    • Oil - I used this to temper jeera. It help release the flavor of jeera well. You can even use ghee if you prefers.

    How to make Chaas Step by Step

    1.In a mixing bowl - add curd. Add jeera powder, salt and black salt.

    2.Add ¼ cup water. Temper jeera in few drops of oil

    3.Whisk the curd well. Add chopped coriander leaves.

    4.Add tempered jeera and mix well. Serve chilled!

    Expert Tips

    • Curd - I usually use chilled curd so chaas tastes refreshing immediately, you can add few ice cubes while whisking.
    • Whisk - I just whisk curd properly so there are no lumps. Smooth texture makes the drink more pleasant.
    • Roast Jeera Fresh - I have noticed fresh roasted jeera powder gives better aroma. You can roast and powder small batch and store.
    • Adjust Water - Add water little by little and mix. If you add too much at once it may become too thin.
    • Temper Carefully - Heat oil lightly and add jeera, do not burn it. Burnt jeera can give bitter taste to the drink.

    Serving and Storage

    Serve Chaas chilled in tall glasses after meals or during afternoon heat. This goes well with simple rice dishes or spicy curries. You can store it in refrigerator for few hours if needed. Stir once before serving because water may settle little at bottom. It is best to consume on same day for fresh taste.

    FAQS

    1.Can I make chaas without tempering?

    Yes you can skip tempering if you want very simple version. Just mix curd, water and spices and serve.

    2.Can I add mint leaves?

    Yes you can add chopped mint leaves for extra cooling effect. It gives fresh taste especially in summer.

    3.Is chaas good for digestion?

    Yes it is light and helps in digestion because of curd and jeera. Many people drink it after heavy meals.

    4.Can I use sour curd?

    If curd is too sour the drink may taste strong. Try to use fresh curd for balanced flavor.

    5.Can I make it in advance?

    You can make it few hours before and keep in fridge. Mix well before serving so texture becomes even again.

    Ingredients
