    Paneer Kheer is a yummy, rich dessert made by simmering crumbled paneer with thickened milk with flavours & nuts. Paneer Kheer also called Paneer Payasam is apt for any festivals or to make occasions special. Paneer Kheer Recipe is featured in this post withstep by step pictures & video.

    Paneer  kheer is rich and creamy using only the basic ingredients like milk, paneer, sugar and nuts. It is flavoured with saffron  and cardamom powder.

    About Paneer Kheer

    To begin with first start by boiling milk, then reduce it to almost half. Add sugar and saffron simmer for 5 mins then add paneer. Mix well, simmer for few more mins then finally add cardamom powder and nuts. Mix well and switch off. Your creamy paneer kheer is ready! Serve chilled or warm.

    This tastes close to rasmalai with soft paneer in rabdi. So if you are a fan of rasmalai then you should definitely give this a try. I have already tried and posted this paneer payasam recipe years back where I used cornflour to thicken the milk but I love this version more. This payasam is also called as channar payesh.

    I have used 2 litres Stahl sauce pan. Milk did not stick to the bottom at all even after a long time boiling and simmering and no wonder this sauce pan is one of my favorite sauce pans that I use now.

    Variations

    • You can add few drops of rose essence or rose water for extra flavour.
    • You can fry nuts in ghee and add it too.
    • Use homemade fresh paneer if you have it.
    • Use condensed milk replacing sugar, it makes the payasam gets done even quicker.

    Ingredients

    • 1 litre milk 4 cups
    • 200 gms paneer
    • 1/2 cup sugar
    • 10 strands saffron
    • 1/2 teaspoon cardamom powder
    • 2 tablespoon mixed nuts chopped (I used almonds and pistachios)

    Instructions

    • To begin with first grate paneer and set aside. I used a 200 gms block paneer.
    • To a sauce pan add milk.Use only full cream milk.
    • Boil milk and simmer.
    • Simmer until it reduces to almost half.
    • Now add sugar.
    • Add saffron strands.
    • Mix it well, Again simmer for few more mins.
    • Add grated paneer.
    • Mix well cook for 2-3 mins.
    • Kheer becomes thick and creamy. It further thickens a bit after cooling.
    • Add cardamom powder and nuts.
    • Mix well and switch off.
    • Serve chilled or warm.
    • Paneer payasam or Paneer kheer ready!

    1.To begin with first grate paneer and set aside. I used a 200 gms block paneer.paneer payasam recipe - grate paneer finely

    2.To a sauce pan add milk.Use only full cream milk.paneer payasam recipe - add milk to sauce pan
