Cabbage Thoran is a quick stir fry made with vegetables. Cabbage thoran is one of the must side dish in Sadya menu. Sadya is a feast prepared by Keralites for all occasions including onam,vishu, birthdays or any family special occasions. Thoran is usually had with steamed rice. The combo of hot rice with parippu curry and thoran is an unbeatable combo.
Cabbage Thoran is a dry sidedish basically a simple stir fry made with coconut oil and sauted with coarse grinded fresh coconut mixture along with other spices.
About Cabbage Thoran
Cabbage Thoran is served along with rice, sambar or parippu curry. It is one of the must in the the Kerala feast called ‘Sadya’. Traditionally coconut oil is used for thoran which gives a great flavour and taste.
I love cabbage thoran with rice and parippu curry but tastes good with sambar too.
You can make plain Cabbage Thoran(find below) or add carrots along with cabbage to make Carrot Cabbage Thoran as I have made.

Cabbage Thoran | Carrot Cabbage Thoran
Ingredients
- 2 cups cabbage shredded
- 3/4 cup carrot grated finely
- 1/4 teaspoon turmeric powder
- 1/2 cup water
- salt to taste
To grind to a coarse mixture:
- 1/2 cup coconut
- 5 nos small onion
- 2 nos garlic
- 1 teaspoon cumin seeds
- 1 long green chilli
To temper:
- 2 tablespoon coconut oil
- 1/2 teaspoon mustard seeds
- 1 small red chilli
- few curry leaves
Instructions
- Trim the edges, peel off the skin. Grate carrot finely.
- Grate cabbage - thin shreds as shown below.
- To a mixer jar : add all the ingredients listed under 'to grind'.
- Grind it coarsely without adding any water. Set aside.
- To a kadai heat coconut oil - add items listed under 'to temper' including mustard seeds, curry leaves and red chilli.Let it splutter.
- Once it splutters add carrot,cabbage.
- Add salt and turmeric powder to it.
- Saute for 2-3 mins.
- Add 1/2 cup water to it.
- Cook covered for 5-7 mins.
- Cook until the veggies turn transparent and slightly soft.
- Once veggies are cooked, add coconut mixture.
- Mix well.Keep sauteing and cook until raw smell leaves. Cook atleast for 5 mins.
- Once raw smell leaves mix well and switch off.
- Cabbage carrot thoran is ready.

Notes
- Always make sure to add coconut only after the veggies is cooked.
- You can replace cabbage, carrot with beetroot, beans, green moong dal etc.You can also add a combination of veggies as per your preference.
How to make Cabbage Thoran

Expert Tips
- Always make sure to add coconut only after the veggies is cooked.

Variations
Instead of carrot, cabbage other vegetables like beetroot, beans, spinach, drumstick can be used to make thoran.
You can either grind onion, garlic along with coconut or add it while sauteing.

Cabbage thoran recipe one of the must in kerala onam sadya.I got the cabbage thoran recipe from mittus friends mother….We have met only twice but spoken over phone many times and thats how we got connected so well.
Though most of our talks surrounds around the kids we do exchange our festive cultures and customs as a part of our conversation.I have planned few more onam sadya menu items, hope I have time to cook, click and post it here….as this week is going to be very busy. With festivals lining up one after another, I am struggling this time with lack of planning….But somehow managing to post, let me see if I can make it for onam too…fingers crossed 🙂 So that justifies the absence of coming up section…as its last minute clicking editing and posting so please bear with me.
Ingredients
- 1.5 cups cabbage shredded
- 7 small onion sliced
- 1/4 cup coconut grated
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder optional
- salt to taste
To Temper:
- 2 teaspoon coconut oil
- 3/4 teaspoon mustard seeds
- 1/2 teaspoon jeera
- a small sprig curry leaves
- 2 red chillies
How to make Cabbage Thoran
- Grate cabbage or chop them finely which is what I did. In a mixing bowl – add shredded cabbage,onion and turmeric powder and mix well,Set aside.
- In a pan heat oil – then add the items listed under ‘to temper’ let it splutter.Then add cabbage onion mixture and saute for 5-7 mins until raw smell leaves.
- Then add salt to taste and red chilli powder.Cook covered until it becomes slightly soft.Make sure that it doesnt get burnt at the bottom so stir it occasionally.
- Once cabbage is cooked and blended with the spices,finally add coconut give a quick stir and switch off.
Serve hot / warm with rice and sambar or with any variety rice.
Tips
- Cook covered or else sprinkle little water and cook.
- Adding red chilli powder is purely optional so you can skip it too.
- Adding coconut oil gives a great flavour to the curry.
- You can even mix curry leaves along with cabbage.
