    Vegetable Raita is a creamy Indian accompaniment made with fresh yogurt, finely chopped mixed vegetables, spice powders and coriander leaves. Veg Raita is a quick to make and delicious raita that can be served with variety rice, biryani, pulao, or even roti, stuffed parathas. etc. Recipe included with step by step pictures and video.

    Raita is an Indian side dish made with thick yogurt usually served with parathas / biryani / pulao / mixed rice varieties. My biryani meal is incomplete without a raita so I made this mixed veg raita to go along with veg biryani and it was a great combination. Do try this Veg Raita and enjoy with your meal.

    About Vegetable Raita

    Vegetable Raita is made by mixing finely chopped vegetables along with curd, spice powders and coriander leaves. Vegetable Raita or Veg Raita is a great combo with biryani, pulao, roti, paratha etc. It can be had as such too tastes great.

    Vegetable Raita has a smooth, silky yogurt base that has a mix of crisp vegetables like cucumber, carrot, onion, tomato, capsicum with flavourful spice powders while fresh coriander leaves enhance the taste of the raita.

    Veg Raita is a healthy side dish that can be done very quickly. Just chop the vegetables mix with curd and tada your vegetable raita is done in minutes. There is no specific measurement for the vegetables used just add as per your preference and your colorful mixed veg raita is ready.

    You can serve along with a lunch meal too. This can be one of the best raita to be served with a heavy meal as it is light and cooling. This raita is healthy too as it has all fresh raw vegetables with mild spices and curd.

    Vegetable Raita Ingredients

    • Curd - Use thick curd for best results. Always whisk it well before mixing for smooth and creamy texture.
    • Vegetables - I have used carrot, onion, tomato, cucumber and capsicum.
    • Spice powders - Roasted cumin powders, black salt, pepper powder and chat masala powder is used.
    • Coriander leaves - Coriander leaves is used for flavor and garnish, it adds freshness and flavour.

    How to make Vegetable Raita Step by Step

    1.To a mixing bowl add 1 cup thick curd.

    2.Whisk it well to make it smooth and creamy.

    3.Add ¼ cup onion, 1 tablespoon tomato, 2 tablespoon capsicum, 2 tablespoon carrot, 2 tablespoon cucumber, salt to taste, ⅛ teaspoon black salt, ½ teaspoon roasted cumin powder, ¼ teaspoon chat masala powder and ¼ teaspoon pepper powder.

    4.Add 1 tablespoon coriander leaves.

    5.Mix it well. Adjust consistency if it is too thick.

    Expert Tips

    • Vegetables - You can even add vegetables like cabbage, boiled potato etc or any of your favorite vegetable that is suitable to eat raw. Make sure to fine chop the vegetables.
    • Curd - Use thick yogurt. You can make this a salad with less raita and give this to your kids, colorful and tasty that they cant say no to it.
    • Spice powders - You can add a pinch of amchur powder if you like the flavor.
    • Adjustment - There is no exact measurement for this raita, you can plus / minus as per your preference.
    • Consistency - The consistency of the raita should be thick and creamy. You can very well adjust the consistency by adding milk or water.

    Serving and Storage

    Vegetable Raita can be served with rice, roti, paratha, pulao, biryani etc. This raita keeps well in fridge for 1 day. I would recommend serving it fresh as it has raw vegetables.

    1.What other vegetables can I add?

    You can add chopped cabbage, cooked corn, potato, pomegranate, grated beetroot etc

    2. Can I make vegetable raita ahead of time?

    Yes, you can prepare it 2-3 hours in advance and store it in the fridge. However, for the best texture and freshness, it's ideal to add salt just before serving, as vegetables (especially cucumber and onion) release water over time.

    3.How can I prevent raita from becoming watery?

    To prevent watery raita :

    • Add salt just before serving.
    • Use thick, full-cream curd.
    • Remove excess water from onion, cucumber by squeezing it gently before adding to curd.

    4.What dishes pair best with vegetable raita?

    Vegetable Raita pairs wonderfully with biryani, pulao, paratha, spicy curries, meal etc. It helps balance spicy food by cooling the palate.

    5. Can I use greek yogurt instead of regular curd?

    Yes,greek yogurt works very well because it is thick and creamy. If it feels too thick, you can whisk in a little water or milk to reach the desired consistency. Regular homemade thick curd also works best.
