    Veg Raita is a quick to make and delicious raita made with mixed vegetables and curd. Veg Raita is a tasty side dish made by mixing finely chopped vegetables with curd, spice powder. Veg Raita is a healthy side dish relished with Biryani & variety rice and could be prepared in minutes. Learn to make Veg Raita with step by step pictures.

    Raita is an indian side dish made with thick yogurt usually served with parathas / biryani / pulao / mixed rice varieties. My biryani meal is incomplete without a raita. I made this mixed veg raita to go along with mutton biryani and it was a great combination.

    About Vegetable Raita

    Vegetable Raita is made by mixing finely chopped vegetables along with curd and spice powders. Vegetable Raita or Veg Raita is a great combo with biryani, pulao, roti, paratha etc. It can be has as such too tastes great.

    Veg Raita is a healthy side dish that can be done very quickly. Just chop the vegetables mix with curd and tada your vegetable raita is done in minutes. Do try this Veg Raita and enjoy with your meal.

    There is no specific measurement for the vegetables used just add as per your preference and your colorful mixed veg raita is ready.

    Vegetable Raita Ingredients

    • Curd – Use thick curd for best results. Always whisk it well before mixing.
    • Vegetables – I have used carrot, onion, tomato, cucumber and capsicum.
    • Spice powder – Roasted cumin powder is used.
    • Coriander leaves – Coriander leaves is used for flavor and garnish.

    How to make Veg Raita Step by Step

    1.Get all your ingredients ready. Peel of the skin of cucumber, carrot then chop all the veggies fine. Whisk the curd, add salt and roasted jeera powder(Dry roast jeera for 2 minutes then powder it) and mix well.

    2.Add all the chopped veggies, then coriander leaves and give a quick mix. Chill the raita until serving time.

    Serve the raita chilled with biryani or any type of paratha.

      Expert Tips

      • You can even add vegetables like cabbage, boiled potato etc or any of your favorite vegetable that is suitable to eat raw.
      • Use thick yogurt. You can make this a salad with less raita and give this to your kids, colorful and tasty that they cant say no to it.
      • You can even add pepper powder.
      • There is no exact measurement for this raita, you can plus / minus as per your preference.

      Serving and Storage

      Vegetable Raita can be served with rice, roti, paratha, pulao, biryani etc. This raita keeps well in fridge for 1 day.

      Ingredients

      • 1 and 1/2 cups curd
      • 1/4 teaspoon cumin powder roasted
      • 2 tablespoon carrot chopped finely
      • 1 and 1/2 tablespoon capsicum chopped finely
      • 2 tablespoon cucumber chopped finely
      • 1 tablespoon tomato chopped finely
      • 1/2 tablespoon coriander leaves
      • salt to taste

        Looks colourful. I prepare it often and sometimes cooks the vegetables before adding it to curd. I am yet to post it in my blog too..
