    Egg Omelette Sandwich is a mild spicy and tasty sandwich made with soft egg omelet, cheese, mayo and sauce layered between bread slices. It is mostly enjoyed as a filling breakfast or even evening snack when you want something comforting and satisfying. It is one of those simple homemade sandwiches which feels filling but still light enough to eat anytime of the day without much effort.

    Egg Omelette Sandwich is a simple homemade style sandwich where egg omelet is used as main filling between bread slices. It is not very fancy but still gives a nice street style taste when grilled properly. The combination of egg, onion and capsicum gives nice balance in every bite. It is one of those recipes that feels simple but still gives a satisfying full meal feeling when eaten hot.

    This recipe is popular in many homes as a quick breakfast option. It is soft inside and little crispy outside after grilling. The taste is mildly spicy with pepper and green chillies giving small heat. Cheese and sauce makes it more rich and soft. The smell of toasted bread with melted cheese makes it very tempting and it usually gets finished fast once served on table.

    Some people like to add more vegetables like tomato or carrot also. You can adjust spice level based on taste. It is a flexible recipe and you can make it little different every time.     • Bread Slices - I have used this as base for sandwich, it holds everything together and gives soft bite. You can use brown bread or sandwich bread also if you like. 
    • Eggs - It is main filling, gives soft texture and protein rich taste. You can replace with egg whites only if needed. 
    • Onion Chopped - I have used this for slight crunch and sweet flavor. It adds nice taste inside omelet and you can also use spring onion instead. 
    • Capsicum - Adds fresh flavour and small crunch in every bite. You can skip or replace with tomato if you like. 
    • Green Chillies - I have added this for mild spice. It gives heat and you can reduce or replace with chilli flakes. 
    • Pepper Powder - It adds light spicy aroma and enhances egg taste. You can also use mixed pepper seasoning if needed. 
    • Cheese Grated - It gives creamy melt texture and rich taste. You can replace with processed cheese slice also. 
    • Butter - I have used this for grilling bread, it gives nice golden color and soft aroma. Oil can also be used instead. 
    • Tomato Sauce - It adds slight sweet and tangy taste inside sandwich. You can use green chutney also if preferred. 
    • Salt - It is used for seasoning eggs and balancing all the flavors.

    How to make Egg Omelette Sandwich Step by Step

    1.Get ready with all your ingredients, chopped and ready. Crack open 2 eggs add salt and pepper.

    2.Whisk it well then add onion capsicum and chopped green chillies. Mix it and set aside.

    3.Heat oil in a pan add the egg, cook until golden, flip over and cook.Now take your bread slices.

    • Mixing - I just whisk the eggs well till it becomes fluffy for soft and light texture. Do not overcook or it may turn hard. 
    • Veggie Balance - You can add vegetables little by little so that the mixture does not become watery, it keeps omelette firm and easy to place on bread. 
    • Grilling Butter - I have used butter on sandwich maker, it gives golden color and nice smell. You can also toast in pan if maker is not there. 
    • Cheese - I add cheese when omelette is still slightly hot so it melts properly and spreads inside sandwich evenly. 
    • Cooking - Cook on medium flame always so bread does not burn and inside filling gets enough time to set properly.

    Serving and Storage

    Serve this hot straight from grill for best taste and soft cheese melt. It goes well with tomato sauce or green chutney on side. You can also pack it for lunch box when it cools slightly.

    Store leftover sandwich in fridge for few hours and reheat in pan or toaster before eating. It tastes better fresh but still fine for same day use. Avoid keeping it too long as bread may turn dry.
