    Pani Puri is a popular Indian chat that is made by using puri, chutneys, tamarind mint coriander water and spice powders. Pani puri is a common street food loved by many. Learn to make easy way to make Pani Puri at home with instructions, tips and tricks.

    I love chats and my fav is always dahi puri and pav bhaji. I have tasted pani puri but not very fond of it but still once in a while I like it mainly for the burst of different flavors – spicy, tangy and sweet. Do try this easy version of pani puri at home and enjoy!

    About Pani Puri

    Pani in hindi means water and Puri means deep fried flat bread. So Pani Puri translates to puri filled with water along with potatoes, green moong beanschutney, raw onion etc. The pani is tangy as it has a mix of spice, sour and sweet chutney.

    Pani Puri is a very popular Indian chat available in all chat shops. Deep fried puris are stuffed with potatoes, cooked moong dal, raw onion, sweet chutney and pani. Pani is nothing but tamarind mint and coriander leaves extract.

    With so many burst of flavors pani puri tastes so good. Though I am not fond of this chat I have seen my friends go crazy for it. You can make pani puri easily and quickly at home, do try this.

    Pani Puri is said to be the king of chats and is a famous street food in north india. These days we find pani puri stalls more common even in South India too. Chat shops are incomplete if they don’t have pani puri in their menu.

    Pani Puri Ingredients

    • Pani – Pani in pani puri has tamarind, mint and coriander leaves extract along with sweet chutney.
    • Puri – You can make homemade puris or buy readymade puris too.
    • Garnishing – Raw onion, sev, boondi can be topped up and served.

    How to make Pani Puri

    For making puri :

    1. Combine rava, wheat flour, maida, baking soda and salt, add water little by little to make a stiff dough like how we make for puris. Allow it to rest for atleast 15-30mins.
    2. Knead the dough once again and pinch equal sized lemon sized balls. Using the chapathi roller, roll out thin rotis and cut with a lid or cookie cutter as a small round puris.
    3. Heat oil in a kadai slide 3-4 puris at a time and using the ladle press in the center and along the edges to make the puris puff up.
    4. Flip over to other side and cook to golden brown on both sides. Drain in a tissue paper. Cool and store in an air tight container and use when required.

    For making pani:

    1. Soak the tamarind in ½ cup of water for approximately 1 hour. Strain out all the pulp through a sieve.
    2. Combine this pulp with the remaining ingredients(chat masala/amchur powder, roasted cumin powder, mint, coriander leaves) except salt and grind it to a fine paste.
    3. Transfer the paste into a large bowl and combine with the 2 cups of water, salt and mix well.
    4. Chill for at least an hours after making for the flavors to blend well.

    For making potato stuffing & assembling

    1. Mash the boiled potatoes, mix turmeric, chilli powder and salt, Keep aside.
    2. Crack a small hole in the center of each puri. Drop a teaspoon of mashed potatoes, then a teaspoon of green gram , then add mint chutney, sweet chutney and then chopped onion. Finally top it up with sev and pour the prepared pani.
    3. Serve immediately and enjoy the explosion of the sweet tangy and spicy flavours together.
    4. Serve immediately as the puris will tend to be soggy after some time.

    Expert Tips

    • You can use sprouted green gram too instead if cooked green gram.
    • Resting the dough is very important is making the puris perfect. You can store them in airtight cointainer for about a month and use it when required.

    Ingredients

    Puri Ingredients

    • 1/4 cup maida / all purpose flour
    • 1/4 cup whole wheat flour / atta
    • 1 cup semolina rava / sooji
    • 1/4 teaspoon baking soda
    • salt as required
    • oil to deep fry

    Pani Ingredients

    • 1/4 cup tamarind firmly packed
    • 2 cups water
    • 1 teaspoon chat masala / amchur powder
    • 1 teaspoon roasted cumin seed / jeera powder
    • 1 tablespoon coriander leaves for garnish
    • 1/4 cup mint leaves + coriander leaves
    • black salt to taste I used regular salt

    Pani Puri

    • 12 to 15 puri
    • 2 cups pani
    • 1 onion chopped finely
    • 2 potatoes
    • 1/2 teaspoon chilly powder
    • a pinch turmeric powder
    • 1/2 cup sprouted green gram I soaked green gram for 4 hrs and pressure cooked for 1 whistle you can use sprouted green gram too
    • 2 tablespoon mint chutney
    • 2 tablespoon sweet chutney
    • 1/4 cup sev / oma podi
    • salt to taste

    Instructions

    How to make puri:

      sharmili…dont know what to write..just wanna say u r my cooking GURU..your recipes are excellent and neatly explained..i tried most of your recipes esp sponge cake,pani puri, rava idli came superbly…i gained courage after seeing your website mam..i was too afraid to try new recipes but now ..i couldnt believe myself…Thanks a lot madam..everybody started appreciating my cooking..m really happy …

      Hii nice clicks.. I tried them. And the pooris were nicely puffed up. But the main problem is they are too soft like normal pooris. What should I do to get a crispy pani pooris.. 🙁 don't have microwave. Please reply me
