    I love all variety rice including be it pulao, biryani or South Indian rice like coconut rice, lemon rice etc. It is not only easy and quick to make, tastes great with just papad or even curd. These one pot rice dishes are a bliss when you are busy with other chores and want to finish lunch work quickly.

    About Potato Rice

    Potato Rice or Aloo Rice is a simple, comforting and flavorful one pot dish made by combining cooked rice with potatoes, spices and herbs. This rice is loved by kids as potatoes is almost every kids favorite vegetable.

    This potato rice recipe is easily customizable, I have just shared an idea you can be creative and add in more flavors, spices as you like. I have tried this potato rice few times now that I modified the recipe to suit our taste.

    With just pantry staples you can make this potato rice quickly. It can served with raita or curd or even pickle, however this potato rice tastes great on its own. I have used basmati rice here feel free to experiment with other rice varieties like seeraga samba rice or regular cooking rice or jasmine rice.

    Roasting potatoes until crisp and then sauteing it with spices makes this rice dish taste unique and delicious. It’s a popular comfort food in many Indian homes and loved by both kids and adults .

    This dish is perfect for those busy weekdays for lunch or dinner when you want to whip up something quick yet satisfying. Made with easily available ingredients like boiled or roasted potatoes, leftover rice, and a handful of spices, Aloo Rice is not just tasty but also incredibly versatile.

    Potato Rice Ingredients

    • Basmati rice – Basmati rice hands down is the best choice for this rice. However you can use any long grained rice or regular cooking rice too.
    • Potatoes – Cube them into bite sized pieces. Always keep it immersed in water to avoid discoloration.
    • Whole Spices – Star anise, cinnamon, cloves and cardamom is used for tempering.
    • Cumin seeds – adds earthy flavor and used for tempering.
    • Onion – Onion is chopped roughly and used. You can use thinly sliced onion too.
    • Garlic – adds flavor to the dish. Alternatively you can use ginger garlic paste too.
    • Spice powders – Turmeric powder, Red chili powder and Garam masala powders are added.
    • Oil – used for cooking potatoes and spices. You can add 1 teaspoon ghee if you prefer.
    • Coriander leaves – Coriander leaves is added for garnish, adds great flavor.

    How to make Potato Rice Step by Step

    1.To a pan add 1 tablespoon oil – add 2 medium sized potatoes cut into bite sized cubes. Saute for 2 minutes.

    2.Cook covered until potatoes turn soft.

    3.Check if potatoes are cooked.

    4.Add salt to taste, 1/4 teaspoon turmeric powder, 1 teaspoon red chili powder.

    5.Give a quick mix. Sauté until well roasted. Remove to a bowl and set aside.

    6.Rinse the pan once. Now add 2 tablespoon oil – add 1 small star anise, two 1/4 inch cinnamon, 2 cloves, 1 cardamom and 1 teaspoon cumin seeds.

    7.Let it splutter, give a quick mix then add 1 tablespoon garlic finely chopped. Saute until golden.

    8.Add 1 medium sized onion roughly chopped, sauté until it turns transparent. Add salt to taste.

    9.Add 1 teaspoon red chili powder, 1/2 teaspoon garam masala powder.

    10.Add potatoes and give a quick mix.

    11.Add 2 cups cooked basmati rice along with 1 tablespoon coriander leaves.

    12.Toss gently without breaking the rice.

    Expert Tips

    • Rice variety – You can use raw rice or basmati rice or use regular cooking rice. Basmati rice tastes best for this dish.
    • Tempering – I have used oil you can use 1 teaspoon ghee additionally. If you don’t want whole spices flavor just temper with mustard seeds and cumin seeds.
    • Cooking rice – I use 1 cup rice : 2 cups water ratio. You can cook rice using straining method or pressure cooking method. Make sure to cook rice grain separated.
    • Oil – Use any cooking oil, I used peanut oil, you can use gingelly oil or refined oil.
    • Potatoes – Cut potatoes into bite sixed pieces, saute well until crisp and add the spcie powders.
    • Spice powders – For a more masala packed flavorful rice add 1 teaspoon biryani masala powder or pav bhaji masala powder.
    • Others – You can add capsicum along with potatoes if you like the flavor.

    Serving and Storage

    Potato Rice can be served with raita or even plain curd. This keeps well in fridge for 2 days, reheat and serve it.

    FAQS

    1.Can I use left over rice?

    Yes you can use leftover rice. Make sure rice is grain separated you can use any long grained rice or regular cooking rice too.

    2.Can I use boiled potatoes?

    Yes you can boil potatoes cut in small cubes then roast with spice powders until crisp and proceed with other steps.

    3.Can I add other vegetables?

    Yes, you can add peas, carrots, capsicum, or even beans to make it more wholesome.

    4.What goes well with potato rice?

    It pairs well with:

    • Raita (curd-based side)
    • Pickles
    • Papad or chips

    5.Is potato rice spicy, is it suitable for kids?

    It is mildly spiced but you can adjust spice powders according to your preference. Yes it is absolutely kids friendly.

    Ingredients

    • 2 cups basmati rice

        There is no need to parboil, pressure cooking is enough to cook the potatoes

      Hi,
      I tries this briyani n its was awsome.. Tasted very much like a restuarant style biriyani. My family loved it so much.. I cant believe tht it was over for the lunch it self coz every time if we hav biriyani for lunch it ll remain for dinner too.. But this was over. I was happy to see the empty vessel.. 😀

        My 1 cup measures 250 ml and I used 1 and 1/2 cups for my 1 cup of rice…..
