    Pillow Cake is a spongy, mild cake made by blending a dough of flour, sugar, milk & baking powder in sandwich maker mould. Eggless Pillow Cake is commonly made as snack for evening tea time and to be explored for the joy of baking.eggless pillow cake recipe

    Pillow Cake is made using wheat flour and unrefined sugar.Sandwich maker cake yes you heard it right, a pillowy soft can be made in sandwich maker, yes the same sandwich maker we use to make bread sandwiches.

    This pillow cake using sandwich maker was in my to try list since a long time.Every time I plan to try this cake some other priorities take over.Finally last week I set out to try so used my no fail recipe as base and tried with wheat flour and coconut sugar. The cake out so soft and spongy..now I understand why the name ‘pillow cake‘.

    This is so easy to make that you can use any cake recipe, the cake is great to pack for kids snack box. Next time I am going to experiment with different flavours, sure to post here too 🙂

    Pillow Cake

    Pillow Cake is a spongy, mild cake made by blending a dough of flour, sugar, milk & baking powder in sandwich maker mould. Eggless Pillow Cake is commonly made as snack for evening tea time and to be explored for the joy of baking.

    Ingredients

    Mix 1 :

    • 3/4 cup wheat flour
    • 1/2 teaspoon baking powder
    • 1/8 teaspoon salt

    Mix 2 :

    • 1/3 cup coconut sugar You can use cane sugar or regular sugar too
    • 1/4 cup water
    • 1/2 teaspoon vanilla essence
    • 1/8 cup oil
    • 3 tablespoon milk

    Mix 3 :

    • 1/4 cup curd
    • 1/2 tablespoon vinegar
    • 1/4 teaspoon baking soda

    Instructions

    • To a sieve add wheat flour, baking powder and salt. Sieve it well for even mixing.
    • In a mixing bowl - add sugar, water and oil.
    • Add vanilla essence and mix well until sugar completely dissolves. In a separate bowl add curd.
    • Add vinegar, and baking  soda. It will bubble up as you can see.
    • Now add curd mixture to sugar oil mixture. Whisk well.
    • Add wheat flour mixture and whisk it well. The mixture was thickish so added milk.
    • The mixture should be flowing not too runny or too thick. If you pour it should spread by itself.
    • Heat the sandwich maker as per the instruction manual, then grease it with oil / butter. Pour the batter into the holes in the sandwich maker, do not pour more just a layer.
    • Close and cook covered for 4-5 mins. Slowly open and check if its cooked it will stick. If it sticks then cook covered for another 2mins. Remove and add batter for next batch.
    • Eggless Pillow Cake ready!

    Notes

    • The recipe I referred did not use milk but I added it as the batter was thick. If you are using white flour then you may not require milk. Adjust measure of milk accordingly.
    • You can use white flour replacing wheat flour and regular sugar too.
    • Keep an eye after 4 mins as each sandwich make is different.

    Expert Tips

        I used apple cidar vinegar, you can use regular vinegar too

        You can but not sure if it will leave the lemon flavour…you can try with the same measure and see

      Such a simple recipe. In the ingredients list for mix 2, you have mentioned oil twice.I guess one was meant to be water. Can you please clarify it.

        Preheat it in the same temperature you are going to bake for 10mins ten proceed with baking

      Tried this pillow cake y/day.. Turned out exactly same as your pic – soft and pillowy. Had to use regular sugar as did not hv cane sugar in hand:(
