There are few variations you can try in this recipe and use maida instead of wheat flour for more soft texture. You can also add chocolate chips or nuts for extra taste and adjust sweetness according to your taste or as per your liking. You can also add vanilla essence for more flavour.
I usually make Pillow Cake when I want quick cake without oven. It is easy to prepare and everyone at home like it as a tea time snack.

Pillow Cake Ingredients
- Wheat Flour - I have used wheat flour as base for this recipe. It gives structure and a bit dense texture. You can use maida also for more soft cake.
- Baking Powder - I added this to help the cake rise. It make the cake soft and fluffy. Use fresh baking powder for better result.
- Sugar - I used coconut sugar in this recipe. It gives sweetness and slight flavour. You can use regular sugar also.
- Vanilla Essence - I added vanilla essence for flavour. It gives nice aroma to the cake. You can skip if not available.
- Oil - I used this in the batter. It keeps the cake moist and soft. You can use any cooking oil.
- Milk - I added little milk to adjust the batter consistency. It helps make the batter smooth. You can add as needed.
- Curd - I used fresh curd in this recipe. It helps make the cake soft and gives slight tang.
- Vinegar - I added this to react with baking soda. It helps the cake rise well. You can use lemon juice also.
- Baking Soda - I added small amount of baking soda. It helps in making the cake fluffy. Do not add more.

How to make Pillow Cake Step by Step
1.To a sieve add wheat flour, baking powder and salt. Sieve it well for even mixing.

2.In a mixing bowl - add sugar, water and oil

3.Add vanilla essence and mix well until sugar completely dissolves. In a separate bowl add curd.

4.Add vinegar, and baking soda. It will bubble up as you can see.

5.Now add curd mixture to sugar oil mixture. Whisk well.

6.Add wheat flour mixture and whisk it well. The mixture was thickish so added little milk.

7.The mixture should be flowing not too runny or too thick more like our idli batter. If you pour, it should spread by itself. Heat the sandwich maker as per the instruction manual, then grease it with oil / butter. Pour the batter into the holes in the sandwich maker, do not pour more just a layer as shown.Close and cook covered for 4-5 minutes. Slowly open and check if its cooked it will stick. If it sticks then cook covered for another 2 minutes. Remove and add batter for next batch.

Serve warm.

- Mixing - I mix the batter well without lumps. Smooth batter gives better texture to the cake.

Such a simple recipe. In the ingredients list for mix 2, you have mentioned oil twice.I guess one was meant to be water. Can you please clarify it.
