Pillow Cake Recipe

Pillow Cake is a soft and spongy cake made using simple flour batter cooked in sandwich maker. This recipe has mild sweetness and soft texture which feels light when you eat. It is little different from regular cakes because it is not baked in oven but cooked in sandwich maker. The texture is pillowy soft so it will be loved by all.

Ingredients

Mix 1 :

  • ¾ cup wheat flour
  • ½ teaspoon baking powder
  • teaspoon salt

Mix 2 :

  • cup coconut sugar You can use cane sugar or regular sugar too
  • ¼ cup water
  • ½ teaspoon vanilla essence
  • cup oil
  • 3 tablespoon milk

Mix 3 :

  • ¼ cup curd
  • ½ tablespoon vinegar
  • ¼ teaspoon baking soda

Instructions

  • To a sieve add wheat flour, baking powder and salt. Sieve it well for even mixing.
  • In a mixing bowl - add sugar, water and oil.
  • Add vanilla essence and mix well until sugar completely dissolves. In a separate bowl add curd.
  • Add vinegar, and baking  soda. It will bubble up as you can see.
  • Now add curd mixture to sugar oil mixture. Whisk well.
  • Add wheat flour mixture and whisk it well. The mixture was thickish so added milk.
  • The mixture should be flowing not too runny or too thick. If you pour it should spread by itself.
  • Heat the sandwich maker as per the instruction manual, then grease it with oil / butter. Pour the batter into the holes in the sandwich maker, do not pour more just a layer.
  • Close and cook covered for 4-5 mins. Slowly open and check if its cooked it will stick. If it sticks then cook covered for another 2mins. Remove and add batter for next batch.
  • Eggless Pillow Cake ready!

Notes

  • Batter consistency – I keep the batter flowing but not too thin. If it becomes too thick the cake may not cook evenly.
  • Mixing – I mix the batter well without lumps. Smooth batter gives better texture to the cake.
  • Greasing – I grease the mould well before pouring the batter. This helps the cake come out easily.
  • Cooking time – I check after few minutes as each sandwich maker is different. Do not overcook as it may become hard.
  • Variation – You can add chocolate chips or nuts for different taste. It gives good bite and extra flavour.
