    Homemade tandoori masala powder is a must have in your kitchen for making many dhaba style tandoori dishes. This is also called Indian BBQ masala.

    Tandoori masala is a aithentic spice mix, very vesatile to use with paneer, mushroom,vegetables or even chicken / meat. This spice blend is easily readily available in many supermarkets, but as I always insist homemade is best minus the preservatives, colors and addictives.

    Tandoor is a special type of clay oven used for grilling and roasting. Kebabs,Rotis and tikkis are the most popular tandoori dishes. Generally veggies or paneer or meat is marinated with a mix of spices alongw ith curd, then grilled in the tandoor oven. Instead of gathering all the spices and adding each time, make your homemade tandoor spice mix and use it readily for your dishes. Together with curd and this tandoor spice mix, whatever we marinade in it the taste elevates.

    About Tandoori Masala Powder

    To begin with first roast all the spices until golden finally add kasoori methi give a quick saute, switch off. Cool down completely, grind to a slightly coarse mixture. Then add all the spice powders, give a quick blend. Cool down completely then store in a clean dry container.

    Tandoori masala spice mix – Key ingredients

    Special combination of spices are used for this spice mix :

    • Coriander seeds, Cumin seeds, Pepper corns
    • Whole spices like Cinnamon, Cardamom, Cloves, Mace
    • Spice powders like ginger poder, garlic powder, nutmeg powder and red chilli powder
    • Kasoori methi

    Usually red color is added in store bought mix to give that fiery red color. I have added homemade kashmiri chilli powder especially to get that perfect red color.

    Variations

    • You can roast kashmiri red chillies along with other spices. Instead add red chilli powder as I’ve did.
    • I just grated nutmeg and added, you can add half nutmeg while powdering.

    Storing Suggestions

    • Store it in an an airtight container in room temperature which will long atleast for 1 month.
    • If you want to increase shelf life then you can store in fridge and use it for 3 months.
    • Use clean spoon everytime you take it.
    • I would suggest to store for a month then make a fresh batch so that flavours are strong.

    Ingredients

    • 2 tablespoon coriander seeds
    • 2 tablespoon cumin seeds
    • 2 teaspoon pepper corns
    • 2 teaspoon cloves
    • 10 nos cardamom
    • 2 nos black cardamom
    • 1 tablespoon mace
    • 3 nos 1 inch cinnamon
    • 2.5 tablespoon kasoori methi
    • 2 tablespoon kashmiri red chilli powder
    • 1 tablespoon ginger powder
    • 1 teaspoon nutmeg powder
    • 2 teaspoon garlic powder
    • 1 teaspoon black salt

    Instructions

    • To begin with : First add all the spices including coriander seeds, cumin seeds, pepper corns, cinnamon, cloves, cardamom, black cardamom, mace etc.
    • Roast for few mins in low medium flame.
    • Roast until golden and aromatic. Roasting the spices perfectly is the main step in making trandoori masala powder recipe.
    • After that add kasoori methi.
    • Give a quick saute and switch off.
    • Cool down completely then transfer to mixer jar.
    • First grind this spice mix to a coarse mixture.
    • Add kashmiri red chilli powder, garlicpowder, nutmeg powder,gingerpowder along with black salt to it.
    • Grind it well until nicely bleneded.
    • Then transfer to a plate. Spread it and cool down.
    • Store Tandoori Masala Powder in a clean dry jar.

    Notes

    • You can add whole kashmiri red chillies, dry ginger, nutmeg while grinding however I prefer to add powders.
    • Do not add whole garlic as it might give a slight moistness to the powder.
      If you don't have garlic powder, skip it and add garlic paste while marinade.
    • You can add this spice mix to tofu, paneer, vegetables , mushrooms etc.
