    About Kadai Masala

    Kadai Masala is a simple yet flavorful spice blend, roast and grind to make kadai based dishes. Kadai masala is made using coriander seeds, red chilies, cumin seeds, pepper, cardamom, cinnamon and cloves. These spices are dry roasted to bring out the aroma and then ground to a slightly coarse powder. It is milder version of garam masala powder. so use it as needed.

    Use this masala powder along with with onion tomato base to make a delicious gravy. This gets its name from kadai or karahi since it is cooked in a special Indian wok called kadai. Kadai is one of the quite essential cookwares in Indian kitchen.

    Kadai Paneer and Kadai Vegetable is one of the top selling dishes too. Besides being popular this is one recipe that is our family favorite, so I make it often. In comparison to other dishes, kadai paneer is the most preferred among all, especially kids love it.

    Kadai Masala Ingredients

    • Coriander seeds – Also known as dhaniya, coriander seeds is one of the key ingredient of this spice blend.
    • Cumin seeds – also called as jeera adds earthy, warming and aromatic flavors.
    • Black pepper – also called as milagu helps in digestion and weight loss by improving the metabolism of the body.
    • Cardamom – also known as elakai adds nice flavor.
    • Cloves – also known as lavangam provides a warm slightly bitter taste and provides an electrifying sensation when consumed raw.
    • Red chillies – also known as vara milagai gives the hot / spicy taste. The quantity can be adjusted based on the family likings (mild spicy to very spicy). You can use round red chilies or long red chilies. I used a combination of red chilies regular and kashmiri varieties.

    How to make Kadai Masala

    1.Get all the ingredients ready. Use these 7 ingredients to make this kadai masala powder. To a kadai add all the ingredients listed.

    2.Roast until slightly golden. Slow roast it but do not let it burn. Roast it for 7-10 minutes in low flame that is enough. Switch off.

    3.Transfer to a plate and cool down completely.

    4.Finally grind it in a dry mixer to a coarse mixture. Later store in a clean dry airtight container. In addition, use a clean dry spoon to increase shelf life.

    Expert Tips

    • Slow roasting is a must for any spice blend mix as the spices should not be burnt hence use preferably iron kadai.
    • Kadai masala powder is meant to be made coarse therefore take care not to make it fine.
    • Dry roast the spices in a kadai or leave it sun dried until crisp then later grind into a coarse mixture.
    • Store in a clean airtight container, use a clean dry spoon every time.
    • Kadai masala powder is used in many gravies.

    Serving and Storage

    • You can use this kadai masala powder for a variety of recipes including kadai vegetable, kadai paneer etc.
    • Store it in an an airtight container in room temperature which will long at least for 1 month.
    • If you want to increase shelf life then you can store in fridge / freezer and use it for 6 months.
    • Don’t allow the powder to get moist therefore use a clean dry container to store it.

    • 1/4 cup coriander seeds
    • 3 red chillies
    • 2 kashmiri red chillies
    • 1 and 1/2 inches cinnamon
    • 8 cloves
    • 10 cardamom
    • 1 tablespoon cumin seeds
    • 1 teaspoon pepper corns
