Eggless Chocolate Cake – Moist Chocolate Cake Recipe(No eggs no butter)

I googled and googled for a very basic chocolate cake recipe and there were soooo many….But my constraint was no eggs, butter and it should be very simple. Trust me, any beginner can try this and I guarantee it wud turn out perfect without any flaws. But the quantity and mixing need to be noted down very carefully as it may be turn sticky and not cooked inside if inaccurate.The taste is no lesser than a brownie and can be served as such or with a helping of choco / caramel sauce.

Moist Chocolate Cake(With no eggs & butter)

I’ve recommended this recipe to few friends, cousin they too tried & agreed with me about the taste. And finally it was certified by my niece, she liked it soo much, and when I heard that she took it to school daily till it got over I was on top of the world!! Am waiting for my lil one to taste it too…..though have given her few pinches of this cake, she was licking & didnt leave my fingers 🙂

Eggless Chocolate Cake Recipe – Ingredients

Preparation Time : 15 mins | Cooking Time : 45 mins | Makes : 9 squares
Recipe Category: Dessert | Recipe Cuisine: World

Dry Ingredients:

All purpose flour(Maida) – 1 and 1/2 cups (200 gms)
Cocoa powder – 3 tbsp
Baking soda – 1 tsp
Baking powder – 1/8 tsp (optional)
Salt – 1/4 tsp
Granulated Sugar – 3/4 cup (165 gms) [Increase it to 1 cup if you dont use choco chips]
Chocolate Chips – 2 tbsp

Wet Ingredients:

Water – 1 cup (250 ml)
Vanilla essence – 1/2 tbsp
Lemon juice / White Vinegar – 1 tbsp (I used lemon juice)
Oil – 1/4 cup (60 ml)
*I halved the recipe to bake it in my 4X4 inch square pan.

Super Moist Chocolate Cake(With no eggs & butter)

Method:

  1. Take water in a mixing bowl, add vanilla essence, sugar, lemon juice and oil. Mix well till sugar completely dissolves . Keep aside.Now take flour, baking soda, baking powder and coco powder and sift together twice atleast to make sure the flour, soda and baking powder and coco powder is evenly spread out.Then slowly add the the sifted flour mixture to the wet ingredients mixture may be in 2 parts.Moist Chocolate Cake - Step1
  2. Gently mix in one direction, break the lumps forming…gently mix it.The batter is runny like you see in the pic.Fold in choco chips and give a quick stir.Preheat oven to 180 deg C for 10mins.Grease the pan with butter, sprinkle maida tap it so that it spreads on all sides.Moist Chocolate Cake - Step2
  3. Pour the batter into the cake pan. Bake it at 180 deg C for 35-40mins check with a fork if a fork inserted comes out clean.Moist Chocolate Cake - Step3
  4. Make sure to cool atleast for 10-15 mins and then invert carefully and cut into pieces and enjoy.

Moist Chocolate Cake(With no eggs & butter)

My Notes:

  • When lemon juice reacts with baking soda it helps the cake to rise. The mixing and measurements matters the most for the perfect moist cake. Have updated the recipe again with measurements after 2-3 trials.
  • I added 1/8 tsp baking powder though the orginal recipe did not use it. So It is purely optional
  • Select the cake pan accordingly as the batter should be atleast half of the pan when you pour it. Also I’ve halved the measurements from the orginal recipe.
  • Using chocochips is purely optional but I recommend adding it. Also if you dont add chocochips increase sugar to 1 cup.

    Cake looks super moist Sharmi, sharmi while making out cake next time with wheat flour, try to get whole wheat pastry flour..u will definitely get the same raisened cake..Am not a professional in baking but somehow i learned through blogging, hope this helps..Congrats on ur awards..

    Though I'm not an expert in baking but would love to share this bit of information with you that Using Wheat flour will alter the outcome of the finished product. I get the desired results when I bake it with cake flour. As cake flour is made from soft wheat flour.

    But your cake looks moist and delicious. Wonderful click as well.

    I am sure this one won't help unless u get the whole wheat pastry flour in India! If u use pastry flour the cake will be moist and raise too. Sounds super cool this fat free recipe.

    Hi, I tried this with self raising flour but without the baking soda and powder. The taste was good but the cake didnt raise much. IS this beacuse the lack of baking powser? I didnt use it as the flour was "self-raising".. Please help 🙁

    @Priti :Actually the cake doesnt double like normal cakes but still it will raise to a certain level as shown in the above pic.

    I havent used self raising flour even once so am not sure of the outcome….But then the orginal recipe doesnt even call for baking powder, it uses only baking soda So I think that might not be the problem.I doubt on the amount of BP and BS in the selfraising flour. So I suggest u to try it with normal APF, with given baking soda n baking powder measurement and see.

    Hi tried this one. Everyone liked this. I have changed the ratio of maida 1 1/2 cup to 1 1/4cup of maida and included 1/4 cup of oats to it. the cake came with crust and nice texture

    @Shirley : I own a OTG but yes you can very well try that in your microwave convection mode, my friend has tried this in microwave. And all the cake recipes can be very well tried in microwave convection mode

    i am new to cooking…..baked ur moist cake today it was stupendo fabulously fantastic JUST LOVED IT:-) but the only problem was i dint have oven reading so i bought a new oven thermometer which i dint know how to operate but managed to keep the temperature in 180deg but it used to come down to 170deg was getting scared but everything went on well….do u know how to use oven thermometer? i dint know how to preheat the oven also but some how managed…..at the end got a beautifull soft moist cake which i never expected thank u Sharmilee

    i bake this cake yesterday it was nice but littil sweetless,my cup size is 250ml i add 1 and half cup and 3/4 cup sugar..i cook in pressure cooker beacuse i dont have microwave baking time was 45 min,thanks given us such a nice reciepe,plz gave me other eggless biscute and cakes recipes

    I baked this cake yesterday and it was unbelievably perfect! I couldn't believe I didn't even need to use a mixer! It came out moist and chocolatey, just like a brownie. I g!added blueberries as an additional spin to the recipe. Would make it again and again!

    Woke up this morning with a shock, I had completely forgotten to make a cake for my son's teacher's birthday (I had promised)! Luckily it was early but I had no eggs in the fridge… I went online and stumbled on this recipe! Followed it exactly, the only change I made was using gluten free flour mix as my kids and I are intolerant. It came out perfect, all the kids loved it! Nobody knew you could make such wonderful cake with no eggs. BRAVO! THANK you. Will be making it more!

    hi your cake looks yummy..i want to try ur cake but i hav one doubt i hav a basic OTG (panasonic) which doesn't hav exact temperature settings ie only low,medium and high..is it possible to bake this cake in my OTG.actually i don't know anyting abt baking even i tried basic vanilla cake but the was not satisfactory..ur cake pushed me to try so pls clarify.

      I too have a OTG only but mine has temperatures….I am not sure of how to set it with just low, medium and high…May be can try to keep in medium and bake, once we get hold of the temperature then it will be fine.

    I can't believe that a cake without eggs can be so good. I normally don't eat chocolate cake. But due to my daughters allergy problem I had to make thiscake which was without eggs and without milk, best. I just wanted to ask, this cake was hard from top and little sticky from inside. Is this how it's supposed tobe. I had baked it for 30 minutes.

    Delicious cake! I did not have chocolate chips so I added some cinnamon, ground cloves, and nutmeg, it makes a very nice spice cake as well. Thank you so much for this recipe.     I like all ur recipes and try them blindly.it comes out great. Today i tried moist chocolate cake. Guess what i didnt habe APF, so tried with our ashirvad wheat flour.it came out spongy, let me see if i can send u some pics. They were awesome in texture. Just that i didnt add a cup of sugar as u said for cake without choco chips, it was little tasteless. My kid likes cake with cocoa, so it was a great hit! If you like the whole wheat bread, then sure you will like them with whole wheat flour. I didnt get them hard at all!

    Hey. Ive tried baking this cake for like a million time already. I personally love it but the rest of my family members didnt think so. I just love the way it tasted but they said it wasnt "fluffy" enough which i agree with. What could be wrong? The texture of the cake is kind of like i dont know how to say this well its kind of "jammed pack" together. Is it supposed to be like that? And i also use a round baking pan and i always get this volcano like rise with cracks running down the middle…pls help. Thanks.

    Hi sharmi. Tried this cake made a small change added 1tsp of instant coffee powder to 1 cup warm water. Tasted heavenly. I am a vegetarian n make only eggless cakes with curd or condensed milk n very cumbersome procedure. This is very simply n easy and cost effective.

    coz maida – 1+1/2 cups = 200 grms
    but sugar – 3/4 cup = 165 grms
    little confused here – generally we should use same cup for all ingredients right?

      Each ingredient weights differently so have the given the measures in cups and grams…You either follow cup or gm measures…it will be confusing if you compare both gm and cup measures

    Hey Sharmi.. I tried this today.. The cake turned out quite good, but there were 2 issues with it:

    1. I had cracks all over the top of the cake, this must be probably my oven.. I should try next time with lesser temperature.

    2. The texture of the cake looked lovely, but while tasting it was a bit sticky to the mouth. Any idea how this can be corrected?

    my cake tin is a big round one… So i doubled all your measurements to match that.. Rest was the same..

    i bought icing cone and made some decoration.. So the cake looked lovely.. We are big time fans of your mug cake.. My husband who generally doesn't like chocolate loves it 🙂

    1.One of the main reasons for the cake to crack is when the batter id dry…..
    2.The texture of the cake should be porous and more of cakey…it will not be sticky
    Do try it next time with exact temperature and measurements am sure you will get it perfect 🙂

    In your cups and spoon size, it is written 1 cup- 250 gm and in this recipe, u have written 1 and 1/2 cup (200gm). how come such mismatch??

      Please check my "Cup & Spoon Measures" on the side bar….It says 250ml and not gms
      Each ingredient weights differently so you need to weight the cup measure in a kitchen scale to get it converted to grams and that what I have done…Hope this helps!

With my 3 trials of baking chocolate cake the two issues I have is 1. the cake is too dry and 2. the cake didnt come out of the baking plate :(. I guess the butter application was less in my 2nd trail. Now for the cake / pastry to be juicy what needs to be done. Could you please suggest. Thank you. Sushma

      It depends on the recipe, for some recipes the batter is thickish and for some the batter it is runny….Please read my demoulding tips too.

    Hi Sharmilee, I baked this cake yesterday. It came out very well. I like my desserts sweet so I was planning to increase the sugar to 1 cup with the chocolate chips. Also I'm in the US and i baked it at 350 for 30 minutes. It was done by then.

    I loved your receipe. I am not a good baker,I never tried even being in USA for 4 years. I tried it and it came good but not best(I felt). It didn't raise and it wasn't porous as yours look when cut. Is there something with "mixing in one direction"? I missed doing that and didn't add salt.

      I guess the soda / baking powder must be inactive….No mixing in one direction is just a top for even mixing so that shouldn't have any problem….

    Hi Sharmilee . I baked this cake and got the perfect texture. But my cake had the taste of water. Which oil did you use in the cake. Tell me the difference between tbsp and tsp. did you powder the sugar or bought powdered sugar from store

    Hi, I am a newbie in baking. have been trying out your vanilla sponge cake (eggless) and it turned out quite well. I tried this chocolate moist cake as well. But i the top was hard but inside it was a little sticky. Is this how it's supposed to be. I had baked for 30min. And my cake cracked a little bit on the top. Did something go wrong?

    Hi Sharmilee,

    I tried this recipe today. I am not sure what went wrong. the cake is moist and fluffy. Also looks amazing. I used maida instead of all purpose flour. The taste of the cake felt like an old stored cake.
    Could the type of oil make any difference in taste? Or i had stored maida for a long time, could it be possible by using maida the taste would differ?
    It would be great if you could help me with this. 🙂

      I am really not sure of the difference between maida and all purpose flour?! Yes use odourless cooking oil else the oil taste will be there

    Hi sharmi..i am a fan of your recipes.i tried this cake but sorry to say the result was too bad. The top portion was crispy and tasty like brownie but inside the cake was not baked properly and the batter was too watery. Mine is an 16L OTG. Do you think this measurement was too much for my oven or any other specific reason. It will be great if u could share some tips with me.thanks.

    hi sharmilee..i have liked your recipes but am so sorry that this cake turned a disaster. the cake was too bad and dry. The top portion was fluffy well but inside it was raw and the bottom part too. I am using an 16 litre OTG Bajaj. I used the same quantity for all ingredients as you had mentioned here. Do you think my oven is too small to bake this much. Any suggestions would be of great help. Thanks. I am very much new to baking.

    Hi sharmi,
    Tried your chocolate cake recipe and it came quite well for a beginner. The taste was gud. But the cake struck to the sides and bottom of the pan and turned out be little roasted. But the centre was soft and moist. I want to know whether its normal for a chocolate cake?

      If the cake is burnt or coco powder is more then the cake may turn out bitter…not really sure what went wrong for u!
