- Strawberries - used fresh strawberries for natural flavour and bright colour and it taste good in ice cream and gives fresh taste.
- Strawberry essence - I just added strawberry essence for extra flavour and aroma in the ice cream and it give more taste and smell.

How to make Strawberry Ice Cream Step by Step
1.To a mixing bowl add 1 cup(250ml) fresh cream. Whisk it for few minutes.

2.Add condensed milk to it.

3.Whisk it for 2 minutes in medium speed. Take your strawberries.

4.Rinse it well, remove the leaf and the center(optional). I saw this technique of using a straw to remove the center part so tried it.

5.Add it to a mixer jar and puree it. If you want it pulpy then blend it accordingly. Add it to the mixing bowl.

6.Fold in using a spatula.

7.Add strawberry essence. Mix it. Pour into freezer safe box.

8.I sprinkled the remaining strawberry puree on top. Freeze it for at least 8 hours. Scoop and serve!

Serve chilled!

- Whisking cream - I usually whisk cream until it becomes thick and smooth in texture. Do not over beat as it may turn too stiff and heavy.
- Strawberry puree - I blend strawberries smooth and it mixes well in cream mixture. You can keep it bit chunky if you want more bite.
- Mixing properly - I fold gently after adding puree so mixture stays light and airy, mixing too fast loses texture.
- Freezing time - I freeze it for at least 8 hours or overnight for proper setting. Less time may not set properly and may affect texture.
- Serving texture - I take it out few minutes before serving and it helps to scoop easily. It becomes soft and easy to serve.
Serving and Storage
Serve this chilled and you can add sliced strawberries on top for serving and it goes well as dessert after meals or during special occasions at home. Store in freezer in a closed container and use within few days for best taste and texture and it stay good when stored properly. Use freezer safe containers to store.

Yes you can use frozen strawberries for blending so it mix smooth and easy and it works fine for this recipe.

Hi mam,I made this ice cream..The ice crystals were formed on the top layer after setting the ice cream for about 8 hours in the freezer..can you tell me where did I went wrong? Is it because of container?
