    About Custard Ice Cream

    Custard Ice Cream is a quick and delicious no-churn ice cream made with milk, vanilla custard powder, sugar, and fresh cream. This recipe doesn’t need an ice cream maker or whipping cream, this recipe is one of the easiest and consists of simple pantry ingredients.

    The base of this custard ice cream is the thick custard made by cooking custard powder with milk and sugar until thick and creamy. To this silky base, fresh cream is added for richness, and it is blended multiple times during the freezing process which gives it a smooth texture.

    With this simple four-ingredient recipe you can create any flavors you want by simply swapping the vanilla custard powder with any desired flavor like strawberry, raspberry, or mango. This vanilla custard ice cream is a delightful after-meal dessert for both kids and adults.

    This is the first time I am trying ice cream at home and am so thrilled , happy and excited about the outcome and yes I am completely satisfied. Everyone loved it at home, especially mittu. When she returned back from school it was homemade custard powder ice cream treat for her and she was so happy and gave a big thumps up.

    Custard Ice cream Ingredients

    • Boiled Milk – This is the base ingredient for the custard ice cream, Use full fat milk.
    • Sugar – Added for sweetness to the custard. 
    • Vanilla Custard Powder – This is the key ingredient of the recipe, this thickens the mixture and gives a subtle vanilla flavor to the ice cream.
    • Fresh Cream – This adds extra richness and gives the ice cream a creamy texture.

    How to make Custard Ice Cream Step by Step

    1.In 1/4 cup milk add custard powder and mix well to form a thick paste, Set aside. Boil milk, add sugar.

    2.Mix well till sugar completely dissolves. Now add custard powder mixture mix well till it thickens. Keep stirring continuously in low flame to avoid lumps.

    3.At one stage the custard will be thick but in pourable consistency more like our dosa batter, At this stage switch off. Cool down completely then add  fresh cream, whisk it well.

    4.Pour it into a freezer safe bowl and freeze it for 2-3 hours. Then scoop out and blend it in a mixer.

    5.Blend it until smooth. Then freeze it again for 2 hours then blend again, do this at least for 4-5 times in total. Finally freeze it for at least 6-8 hours. Once taken from the freezer it will look very hard, leave it aside for 5-10 minutes, then scoop out.

    Serve immediately.

    Expert Tips

    • You can use any custard powder flavor of your choice. You can even try rasberry / strawberry. I have used vanilla custard powder.
    • If you have hand mixer then its easy for u, just whisk using it then freeze it.
    • Use freezer safe bowls to freeze it.
    • You can use sprinklers or chocolate chips as garnish or even nuts / tutti frutti for topping.
    • Let the ice cream sit at room temperature for 5–10 minutes before scooping.
    • Adjust sugar according to your taste, 1/2 cup was perfect for us.
    • For a more rich icecream add 2 tablespoon condensed milk.
    • The ice cream keeps well for about a week if freezed.
    • Cook the custard on low heat. Stir continuously to avoid lumps.
    • Mix the custard powder in a small amount of milk before adding it to the boiling milk.
    • Cool the custard completely before adding cream.
    • Freeze and blend the mixture 4–5 times for a smoother texture.

    Serving and Storage

    Serve the custard ice cream with your favorite toppings like choco chips, sprinkles, or nuts. 

    Once frozen, it can be stored in the freezer for up to a week. Always allow it to soften slightly before scooping for perfect creamy texture.

    FAQS

    1. Can I use any flavor of custard powder?

    Yes, you can use any flavor of your choice like vanilla, strawberry, raspberry, or even mango-flavored custard powders.

    2. What if I don’t have fresh cream?

    You can use Amul fresh cream or skip it, though cream gives the ice cream a richer texture.

    3. Why do I need to blend it multiple times?

    Blending breaks ice crystals and makes the ice cream turn smoother and creamier without an ice cream maker.

    4. How do I know when the custard is thick enough?

    It should be slightly thicker than dosa batter but still be pourable. That’s the right consistency to stop cooking.

        No I havent used kitchenaid,You can try with normal mixie itself, beating several times gives the icecream a nice soft creamy texture
