    Fruit Popsicle is a cool refreshing frozen treat made using fresh fruits and tender coconut water. It is simple home style popsicle that is mostly loved during hot summer days when everything feels too hot and heavy. It is one of those easy recipes which gives natural sweetness from fruits without any artificial flavour or colour added. Kids enjoy it a lot because it looks colourful and tastes fresh in every bite.

    This popsicle is light, juicy and very cooling when eaten straight from freezer. The fruits stay slightly soft inside while coconut water freezes into a gentle icy texture around it. It is a simple way to enjoy fruits in summer without making it boring. It always gets finished quickly once frozen and kids keep asking for more.

    About Fruit Popsicle

    Fruit Popsicle is a homemade frozen dessert made by combining fruits with tender coconut water and freezing in moulds. It is also not heavy like ice cream but still gives a cooling sweet taste. The natural fruit flavour comes through very clearly in every bite. It feels like a small fruit surprise inside a frozen bar which melts slowly in the mouth.

    This recipe is often made during summer season when fresh fruits are easily available. It is soft, juicy and slightly crunchy depending on fruits used. The taste is naturally sweet and sometimes mildly tangy based on fruit mix. Coconut water gives very light refreshing base which keeps it simple. It is also one of the easiest ways to make kids eat different fruits without any fuss.

    You can use any fruits you like such as grapes, apple, kiwi, strawberry or pomegranate. Some people also add juice instead of coconut water for different taste. It is flexible recipe and you can change fruits every time based on season. Every batch comes out little different in colour and taste which makes it more fun to prepare again and again.

    I usually make this when fruits are lying in fridge and nobody wants to eat them fresh. Sometimes I even make extra and store for few days so there is always something cool ready at home.

    Fruit Popsicle Ingredients

    • Mixed Fruits - I have used this as main part of popsicle, it gives natural sweetness and colour. You can use any seasonal fruits you like or replace with single fruit also. 
    • Tender Coconut Water - It is used as liquid base for freezing, it gives light sweet and refreshing taste. You can replace with lemon juice or any mild fruit juice if needed. 

    How to make Fruit Popsicle Step by Step

    1.Measure and keep tender coconut water. Clean and chop the fruits.I used mixed fruits, check ingredients list. Take the fruits in a spoon.

    2.Fill the popsicle mould with almost ¾th of it. Then pour tender coconut water till little below the rim of the mould.

    3.Cover with aluminium foil. Look how pretty they look. Insert ice cream sticks.

    4.Freeze for at least 6 hours or overnight. I usually freeze overnight.Show the bottom of the mould under running tap water, pull out the sticks gently and slowly. Enjoy!

    Serve immediately!

    Expert Tips

    • Cutting - I usually cut fruits into small even pieces so that they freeze properly and are easy to eat. Big pieces may become hard to bite after freezing. 
    • Fruit Balance - Try to mix soft and slightly firm fruits so that the texture feels interesting when you eat popsicle. Too soft fruits alone may turn mushy. 
    • Filling Moulds - Do not fill mould fully, leave small space so coconut water has room to expand while freezing and does not spill. 
    • Stick Placement - I just Insert sticks before freezing properly so they hold straight and do not move when solidified. 
    • Freezing - I freeze overnight so popsicles set fully and come out clean without breaking. Less time freezing may make them soft. 

    Serving and Storage

    Serve this straight from freezer when fully frozen for best taste and cooling effect and it just tastes refreshing on hot afternoons and works well as a light dessert after meals. Store them in freezer in mould or airtight container so they stay fresh for few days. 

    FAQS

    1.Can I use only one fruit?

    Yes you can use single fruit also like mango or strawberry. It will still taste good and more focused on one flavour.

    2.Can I skip tender coconut water?

    Yes you can replace it with any mild juice. Coconut water just gives lighter and natural taste.

    3.Can I add sugar?

    It is not needed usually because fruits are already sweet. But you can add little sugar if fruits are sour.

    4.Can I make it in advance?

    Yes you can prepare and store in freezer and it stays good for few days. It is good to make ahead and keep ready.

    5.Can I make this in normal glass instead of mould?

    Yes you can use small cups also. Just cover and insert stick before freezing.
