    Almond Cookies are rich, crispy cookies made by garnishing disc shaped blend of ground almonds, butter, powdered sugar, wheat flour with chopped almonds and baking it. Almond Cookies are ideal for special occasions, snack box and weekend evening tea time. Almond Cookies Recipe presented here is eggless & without any raising agents.

    Almond Cookies is an eggless version with step by step pictures.I always wanted to try recipes with almond flour , I have tried linzer cookies and it tasted awesome.I just powdered almonds and used it for this recipe,used wheat flour and with no rising agents its perfect for kids snackbox and thats what I did, reserved few cookies secretly else both will finish off at one go.

    Almond Cookies

    Almond Cookies are rich, crispy cookies made by garnishing disc shaped blend of ground almonds, butter, powdered sugar, wheat flour with chopped almonds and baking it.     Ingredients

    • 3/4 cup wheat flour
    • 1/8 heaped cup almonds yields 1/4 cup powder
    • 1/3 cup powdered sugar
    • 1/4 cup butter at room temperature
    • 1/4 teaspoon cardamom powder
    • 1/8 cup + 1 tablespoon milk
    • 2 tablespoon sliced almonds
    • 1/8 teaspoon salt

    Instructions

    • Take almonds in a grinder and grind to a fine powder, set aside.
    • To a mixing bowl add wheat flour.
    • Add powdered almond flour, powdered sugar and cardamom powder. You can blanch almond peel the skin then powder it too. But it needs time for drying up so took this short route.
    • Add required salt. Mix well.
    • Add butter to it. Mix well to form crumbles.
    • Add milk to it and mix well with your finger tips, do not knead. Form a dough.
    • Using a tablespoon take the dough (for equal sized cookies). Roll between your palms, slightly flatten it.
    • Preheat oven at 180 deg C for 10 mins.
    • Dip the top in silvered almond.
    • Bake in preheated oven at 180 deg C for 12-15 mins or until the top turns golden.
    • Enjoy Almond Cookies!

    Notes

    • These cookies are mild in sweet so increase sugar if you prefer sweet cookies. You can add 1/2 cup for more sweeter version.
    • I used homemade wheat flour so milk quantity may slightly vary so adjust accordingly.
    • Do not knead it will yield hard cookies. Just mix with finger tips.

      I made these because I had some packet almond flour and they turned out great! My family finished them in flat 5 minutes.
