    Usually fried rice is one of the popular dishes ordered at restaurants and hubby is fond of all types of fried rice recipes. He likes egg fried rice very much and have seen him enjoy chicken fried rice too so I make it once in a while. I have shared a restaurant style chicken fried rice recipe here, do try and enjoy!

    About Chicken Fried Rice

    Chicken fried rice is a popular Indo Chinese rice dish enjoyed throughout the world. Chicken fried rice is a popular order and a take out at restaurants and this recipe comes close in taste to it. This is easy to make with soft, tender and juicy chicken tossed with rice, vegetables, sauces, herbs and spices.

    Indo Chinese recipes are quick to make if you make all the ingredients ready. Though it not possible to get the exact taste as in restaurants still homemade chicken fried rice tastes so delicious with the available ingredients in your kitchen. Using a wok in high flame helps in cooking faster and creating a smoked effect.

    Chicken fried rice is made differently in each part of the world, this is a quick version replicating restaurant taste. In Asian countries like China, Korea, Japan - jasmine rice or long grain rice is used for making fried rice but here in India basmati rice is most commonly used.

    I always use a iron wok or kadai for making fried rice. Wok helps it easier to lift and toss in high flame which cannot be effectively done using kadai. This is my version of making chicken fried rice at home. In most hotels MSG or ajino motto is used which is not good for health so homemade fried rice is always best and healthy.

    Chicken Fried Rice Ingredients

    • Chicken - Use boneless chicken breast or chicken thighs cut into small pieces. I have used chicken breast which cooks faster and is juicy which is perfect for fried rice.
    • Vegetables - I have added onion, carrots, spring onion and capsicum.
    • Rice - Basmati rice is best to use. However you can use jasmine rice or any long grained rice.
    • Sauces - I usually add soy sauce, red chili sauce and vinegar. You can use green chili sauce replacing red chili sauce.
    • Eggs - I add eggs which is best for chicken fried rice.
    • Others - Ginger, garlic, green chilies and spring onion stem are used.
    • Corn flour - Corn flour is added along with sauces to chicken and cooked.
    • Seasoning - Salt, pepper and sugar are the main seasonings in any fried rice.

    How to make Chicken Fried Rice Step by Step

    1.To a bowl add 1 teaspoon corn flour along with salt to taste, ½ teaspoon pepper powder, ½ teaspoon soy sauce, ½ teaspoon chili sauce.

    2.Mix it well and set aside.

    3.Crack open 2 eggs and set aside.

    4.Heat 1 tablespoon oil in a wok and add the eggs.

    5.Add salt to taste, scramble it well. Transfer to a bowl and set aside.

    6.Add 3 tablespoon oil then add chicken.

    7.Saute for 2 to 3 minutes until color and texture of chicken changes. Transfer to a bowl and set aside.

    8.Add 1 tablespoon garlic, ½ teaspoon ginger, 1 tablespoon spring onion white part and 1 green chili.

    9.Saute for few seconds.

    10.Add ½ cup onion, ¼ cup carrot, ¼ cup capsicum.

    11.Saute in high flame for 2 minutes. Make sure to retain the crunch of the vegetables they should not turn soft.

    12.Add chicken, egg.

    13.Give a quick mix.

    14.Add 3 cups cooked basmati rice. Add salt to taste, 1 teaspoon pepper powder, ¼ teaspoon sugar, 1 teaspoon soy sauce, 1 teaspoon chili sauce and ½ teaspoon vinegar.

    15.Mix it well. Toss in high flame for 2 minutes.

    16.Add 2 tablespoon spring onion.

    Hot yummy chicken fried rice is ready to serve!

    Expert Tips

    • Rice - I soaked the basmati rice for 20 minutes then cooked in a sauce pan for exactly 8 minutes after it started boiling. Switch off and drain water. You can even pressure cook rice for 1:1.5 ratio (rice : water) for 2 whistles in low medium flame. Make sure to fluff the rice and spread it with little oil to make the grains separate if using pressure cooker method.
    • Chicken - Choose breast chicken cut into small pieces so that it cooks faster and retains juiciness.
    • Vegetables - Chopping the vegetables fine helps in cooking faster. Sauteing the it in high flame gives a nice smoky flavor and also retains its crunchiness without the raw smell. Don't skip spring onions as gives a good amount of Chinese flavor to the fried rice.
    • Sauces - Don't add more soy sauce than mentioned amount else your fried rice color will be on the darker side also soy sauce will be over powerful. I have used red chili sauce but you can use green chili sauce too.

    Serving and Storage

    You can serve Chicken Fried Rice with any manchurian like gobi manchurian, baby corn manchurian etc. Any chili dishes will go well with fried rice too. Chicken fried rice keeps well in fridge for about 2 days. Reheat and serve it.

    1.Which rice is best to use?

    Basmati rice is best for fried rice. However any long grained rice can be used too. Jasmine rice can also be used.

    2.What type of chicken is good to use?

    Broiler chicken is best for fried rice. Use breast chicken cut into small cubes which will be soft, tender and juicy perfect for fried rice. Do not over cook for 2-3 minutes will be fine.

    3.Can I skip vegetables?

    Yes you can skip vegetables and add just eggs and chicken but adding vegetables gives more taste and flavor to the fried rice so I recommend adding.
