    Aloo Gobi is a dry curry perfect as side dish for rotis! I made it dry to go with rotis and rice with dal. You can even make it as gravy as per your preference. Aloo gobi is a easy side dish that pairs well with rotis and rice, do try this.

    About Aloo Gobi

    Aloo in Hindi means potato and Gobi is cauliflower so Aloo Gobi is a combination of these vegetables along with herbs and spices. This Aloo Gobi is a perfect combination of vegetables with masala flavor.

    Aloo Gobi is a popular dry curry and a staple in North Indian household. It serves great with rice, pulao and roti. I love North Indian dishes and this sis also one of my favorites.

    This is the easiest side dish you can make when you have both the vegetables in hand. Both the veggies are my favorite so this recipe gives a regular attendance in our routine menu.

    Aloo Gobi Ingredients

    • Cauliflower – Choose fresh cauliflower white in color.
    • Potato – Choose small potatoes.
    • Tempering – A tempering is made with oil, cumin seeds.
    • Onion, Tomato – Onion is added for crunch and flavor, tomatoes are added to make it a curry.
    • Ginger garlic paste – Ginger garlic paste is added for flavor.
    • Spice powders – Turmeric powder, Red chili powder and garam masala powders are added.
    • Coriander leaves – Add generous garnish of coriander leaves.

    How to make Aloo Gobi Step by Step

    1.Pressure cook potatoes up to 3 whistles until soft. Peel of the skin, chop them into cubes and keep aside. Cook cauliflower florets in water with salt and turmeric powder until soft yet firm enough to bite. Heat oil in a pan, add cumin seeds allow it to crackle. Add ginger garlic paste, onions fry till slightly browned.

    2.Then add tomatoes cook until raw smell leaves. Now add turmeric powder, red chilli, garam masala powder and required salt. Sauté for few minutes until raw smell of tomatoes leave.

    3.Add cauliflower and potatoes, mix well. Cook until the veggies absorb the masalas, it may take 2-3 minutes. Adjust salt at this stage. Garnish with coriander leaves and switch off.

    Serve hot with rotis or rice. It goes well even with any variety rice.

    Expert Tips

    • Make sure gobi and aloo both are cooked at the same time firm enough to bite, they should not be mushy.
    • You can use tomato puree and make it gravy kind.
    • This is apt with naan, rotis or even any variety rice.

    Serving and Storage

    Aloo Gobi can be served with rice, roti etc. This curry keeps well in fridge for 2 days, reheat and serve it.

    Ingredients

    • 2 small potatoes
    • 1 small sized cauliflower
    • 1 teaspoon ginger garlic paste
    • 1 medium sized onion chopped finely
    • 1 medium sized tomato chopped finely
    • 1/4 teaspoon turmeric powder
    • 1 teaspoon red chilli powder
    • 1/2 teaspoon garam masala powder optional
    • 2 teaspoon coriander leaves
    • salt as required

    To temper

    • 1 tablespoon oil
    • 1 teaspoon cumin seeds

    Instructions

      My fav and always love to have with rotis.But now a days stopped having as my frnd told tht they're putting lots of slow poison during the cultivation to avoid worms.So not hvng now but after looking at your's feel like having now.

      @Mitha : Sure will post it 2mrw…Its close to SKS mysore pak but the ghee doesnt ooze out like in SKS version…but am on the lookout for the recipe, will post that version too soon 🙂
