    Egg Fried Rice is our family favorite both the kids love it so making it for so many years now I can say it comes out perfect every time. Egg Fried Rice is one dish I have been making even before I started blogging as it is hubby’s favorite order in restaurants.

    About Egg Fried Rice

    Egg Fried Rice is one of the popular dishes ordered at restaurants. Egg Fried Rice is mild and flavorful with all vegetables along with scrambled eggs. This Egg Fried Rice shared here is Chinese Restaurant Style with a burst of flavors.

    Hubby is fond of Egg Fried Rice and that’s the reason I started making fried rice at home. Each time I learnt from my mistakes and after few plus and minuses I got the knack of making the perfect fried rice as in restaurants. Of course minus ajino motto so homemade is always healthy and tastes delicious.

    I have seen the making of Fried Rice in few street shops – they use a large wok and cook throughout in high flame. Indo Chinese or Chinese uses flash cooking methods so when the ingredients are ready the dish gets done in no time. I am sure you will fall for this dish when tasted once and that justifies the popularity of Chinese Egg Fried Rice.

    I always add more vegetables for Egg Fried Rice to make it more healthier and whole some. The key to a perfect Egg Fried Rice is to first cook rice perfectly, it should be cooked aldente – means it should be cooked slightly soft but have a bite. I usually cook a minute extra to be easily digestible especially for kids.

    Egg Fried Rice makes for a quick and tasty lunch. If you have leftover rice then making egg fried rice is just a breeze. The unique combo of ingredients justifies why it is so popular everywhere.

    Street Style vs Restaurant Style

    Either Street Style or Restaurant Style they have a unique smoky flavor which makes the dish unique. This flavor comes by tossing fried rice in a large wok and cooking it in high flame.

    Also in hotels they use ajino moto or MSG which is not good for health and that is one main reason I avoid fried rice from hotels. So it is always safe and healthier to replicate restaurant style dishes at home and enjoy! Recently I had access to get a wok mainly to cook Indo Chinese dishes and I absolutely love the flavor it lends to such dishes.

    Egg Fried Rice Ingredients

    • Rice – You can use long grained basmati rice, regular basmati rice or even jasmine rice.
    • Vegetables – Veggies is absolutely your choice you can add carrots, spring onion, mushrooms, beans, capsicum, cabbage etc.
    • Eggs – I have used country eggs you can use regular white eggs too.
    • Sauces – Soya sauce is the main sauce used here. You can even add chilli sauce if you prefer.
    • Flavorings – Garlic and pepper adds more flavor to this dish.

    How to make Egg Fried Rice Step by Step

    1.Soak 1 cup basmati rice in water for 15 mins.

    2.Set aside undisturbed. Soaking helps in giving grain seperated and also soft fluffy rice.

    3.Rinse it well until starch water is washed off. Drain water completely.

    4.To a sauce pan add 4 cups water – bring it a boil add required salt.

    5.Add drained rice to it.

    6.Give a quick mix and cook in low medium flame for 6-8 mins.

    7.Rice should be aldente – should have a bite. Rice should be soft but not mushy – only when pressed hard it should be mashed that is the right stage. Immediately switch off.

    8.Transfer to a colander drain water completely.

    9.Spread it over a plate to cool down. Set aside.

    10.To a bowl – add 3 eggs. I used country eggs, you can use white eggs too.

    11.Beat it well until fluffy.

    12.Heat 1 tablespoon oil in wok – add beaten eggs to it. Add required salt , 1/2 teaspoon crushed pepper.

    13.Scramble it well. Transfer to a bowl and set aside.

    14.Now to the same wok – add 2 tablespoon oil – add 1 tablespoon garlic finely chopped and 1 tablespoon spring onion white part.

    15.Saute for a minute.

    16.Add 1/2 cup carrot finely chopped, 1/2 cup capsicum, 3/4 cup cabbage shredded and 1/4 cup beans thinly sliced.

    17.Saute for 2 minutes in high flame, keep stirring until the veggies start to shrink.

    18.Add salt to taste, 1 teaspoon vinegar, 1 teaspoon soya sauce and 1 teaspoon pepper powder.

    19.Give a quick stir.

    20.Add cooked rice.

    21.Add 1/2 teaspoon crushed pepper, 1/4 cup spring onion green part.

    22.Give a quick stir then add scrambled eggs.

    23.Give a quick mix. Toss the rice in high flame for 2 mins and switch off.

    Expert Tips

    • Rice – I soaked the basmati rice for 15 minutes then cooked. You can even pressure cook rice for 1:1.5 ratio (rice : water) for 2 whistles in low medium flame. Make sure to fluff the rice and spread it with little oil to make the grains separate if using pressure cooker method. Allow it to rest at least for 15 minutes.
    • Eggs – You can even crack the eggs and add it along with veggies but it tends to stick with the rice, so I prefer scrambling the eggs separately and adding. Always crack open the eggs in a bowl then add it to the wok. In case if any egg is spoiled it may ruin the entire dish if added directly.
    • Vegetables – Chopping the veggies very fine helps in cooking faster. Sauteing the veggies in high flame gives a nice smoky flavor and also retains its crunchiness without the raw smell. Don’t skip spring onions as gives a good amount of Chinese flavor to the fried rice.
    • Sauces – Don’t add more soya sauce than mentioned amount else your fried rice color will be on the darker side also soya sauce will be over powerful.
    • Variations : You can add other sauces like 1 teaspoon green chili sauce or 1 teaspoon red chili sauce if you like the flavor.
    • You can add beaten eggs to veggies and scramble it too, that way it will to the veggies and rice, if you are ok with it you can do that way.
    • You can use jasmine rice or seeraga samba rice instead of basmati or long grained rice.

    Serving & Storage

    You can serve Egg Fried Rice with any manchurian sauce or gobi / baby corn manchurian etc. Any chili dishes will go well with fried rice too.

    Fried Rice is meant to had hot so consume it fresh but if you have leftovers you can store in fridge for one day, reheat and serve it. Dishes with eggs are good to be consumed the same day it is made so I would not recommend storing them.

    1.Which rice is best for fried rice?

    Basmati rice is best for fried rice. Aged long grained basmati rice is perfect for any fried rice. You can use jasmine rice too if you like the flavour.

    2.How to cook rice fluffy and nonsticky?

    First rinse the rice well, soak atleast for 15 mins then cook for the mentioned time drain water completely, you can even rinse the rice to avoid further cooking. Spread it on a plate to cool down and make it grain seperate.

    3.Which oil is best for fried rice?

    I use normal cooking oil for making fried rice. Olive oil is also good, but make sure to use extra virgin olive oil as it has low smoking point.

    • 1 cup basmati rice

    • 1/2 cup carrot finely chopped
    • 1/2 cup capsicum
    • 3/4 cup cabbage

      Oh my dear Sharmilee,
      You have no idea how many times i have made this fried rice recipe of urs and won each and everyone's heart bowled over. Its my go to main dish if i ever have some guests over..whats best, my husband says its the best fried rice he ever had and he keeps showering me with praises for my fried rice ..i must say, fried rice is my favorite dish too, and i am so happy that now with ur recipe i know to make my favorite dish at its best. so flavorful and simple steps to follow, i just always add extra veggies and lesser rice to get the flavor nicely mixed together. Thanks a ton..i owe you big time..

      Hi, thank you for this fried rice recipe. I made the egg and eggless version. My kids lived them. I have made it so many times now that I know it by heart. After two cooking I started using my own approximate measurements. Waiting for other lively recipes.
