    Fried Rice is our family favorite so why not try adding sweet corn to fried rice and it was a hit. Hubby can have fried rice even daily – yes he is crazy after fried rice and his staple order in restaurants will be egg / veg fried rice.

    About Corn Rice

    Corn Rice or Sweet Corn Rice is a delicious one pot rice dish made by combining cooked rice with sweet corn kernels along with other vegetables and seasonings to enhance the flavor. It’s a popular dish in many cuisines around the world, especially in regions where sweet corn is abundant.

    Corn Rice or Sweet Corn Fried Rice can be made in numerous ways and this is my take on it. Fried Rice is the most popular order in hotels and restaurants and my family loves it. So wanted to try adding sweet corn to it and here is the tasty preparation.

    This Indo Chinese Corn Rice is sure a crowd pleaser. This is a simple fried rice with the twist of adding sweet corn kernels to it. This can be had as such as it tastes great by itself but if you want you can pair it with any manchurian dishes.

    Mittu loves any fried rice so its one of the ways I sneak in all the veggies. When I pack fried rice for mittu’s lunchbox I skip the sauces and make it simple more with Indian flavors. This is one such easy and simple rice with sweet corn and minimal ingredients.

    Corn Rice Ingredients

    • Rice – You can use long grained basmati rice, regular basmati rice or even jasmine rice.
    • Vegetables – I have added onion, capsicum along with sweet corn. You can even add carrots, spring onion etc.
    • Sauces – Soya sauce is the main sauce used here. You can even add chilli sauce if you prefer.
    • Seasoning – Garlic and pepper adds more flavor to this dish.

    How to make Corn Rice Step by Step

    1. Cook rice spread it over a plate to cool down. Set aside. You can check how to cook basmati rice detailed post.

    2.To a wok heat 2 tablespoon olive oil add 1 tablespoon garlic finely chopped along 2 slit green chilies.

    3.Saute for a minute until garlic starts to turn golden.

    4.Add 1/2 cup onion, 1/2 cup capsicum along with required salt.

    5.Saute in medium flame for a minute.

    6.Add 1 teaspoon soya sauce along with 3/4 teaspoon pepper powder, 1/2 teaspoon sugar.

    7.Give a quick saute.

    8.Add 1 cup cooked sweet corn. Check how to cook sweet corn detailed post.

    10.Add 3 cups cooked basmati rice.

    11.Add 3/4 teaspoon crushed pepper.

    12.Give a quick mix.

    13.Toss the corn rice in high flame for about a minute and switch off.

    Expert Tips

    • You can even add spring onions too.
    • Olive oil gives a nice flavor to this dish.
    • You can also add 2 tablespoon carrot while sauteing the veggies.
    • Use freshly ground pepper for a great flavor.
    • Sauteing the veggies in medium / high flame gives a nice smoky flavor and also retains its crunchiness without the raw smell.
    • I soaked basmati rice for 30 mins then pressure cooked for 1:2 ratio(rice:water) for 3 whistles in medium low flame.
    • Make sure to fluff the rice and spread it with little olive oil to make the grains separate.Allow it to rest at least for 30 mins before adding.

    Serving & Storage

    You can serve Corn Rice with any manchurian. Any chilli dishes will go well with this rice too. I would recommend to consume corn rice fresh to enjoy the best flavor. Corn Rice keeps well for about 8 hours in room temperature and in fridge for 1 day.

    Basmati rice is best for corn rice. Aged long grained basmati rice is perfect for any fried rice. You can use jasmine rice too.

    Ingredients

      I must say you are really a good cook. Even a simple dish did not loose colour and texture, for example this rice doesn't look pressure-cooked and capsicum has crisp texture. I feel like eating a lunch at your home. 😉
