    About Sweet Corn Fried Rice

    Mittu loves any fried rice so its one of the ways I sneak in all the veggies. When I pack fried rice for mittus lunchbox I skip the sauces and make it simple more with indian flavours so wanted to post this easy sweet corn fried rice recipe.

    Corn Fried Rice | Sweet Corn Rice

    Ingredients

    • 1 cup basmati rice
    • 1/2 cup boiled sweet corn
    • 2 small carrots finely chopped
    • 1/4 cup cabbage finely chopped
    • 1 tbsp garlic finely chopped
    • 1/2 tsp green chillies finely chopped
    • 1/8 tsp soya sauce
    • 1 tsp pepper powder
    • 1 tbsp oil
    • 1/2 tsp sugar
    • salt to taste

    Instructions

    • Soak basmati rice for 30 mins then pressure cook for 3 whistles in medium flame in the ratio 1 (rice) : 1.5 (water) cups.
    • Spread it in a plate and fluff it up with a fork add a tsp of oil and let it cool down.
    • In a pan heat oil - add garlic, green chillies,garlic - saute for a minute till it turns slightly browned.
    • Then add carrot and cabbage in medium high flame, fry till the veggies shrink and raw smell leaves.
    • Then add capsicum and saute for a minute then add sweet corn along with pepper powder and required salt. Stir well in medium high flame.
    • Add cooked rice and give a quick stir.
    • Then add sugar and give a quick stir. Switch off.
    • Serve Corn Fried Rice hot with your choice of side dish or any manchurian.

    Notes

    • You can even add spring onions.
    • You can also  add 2 tbsp onion while sauteing the veggies.
    • If you prefer add 1/4 tsp soya sauce.
    • Use freshly ground pepper for a great flavour.
    • Sauteing the veggies in high flame gives a nice smoky flavour and also retains its crunchiness without the raw smell.
    • I soaked basmati rice for 30 mins then pressure cooked for 1:1.5 ratio (rice:water) for 3 whistles in medium low flame.
    • Make sure to fluff the rice and spread it with little olive oil to make the grains separate. Allow it to rest at least for 30 mins.

    How to make Sweet Corn Fried Rice

    1. Soak basmati rice for 30 mins then pressure cook for 3 whistles in medium flame in the ratio 1(rice):1.5(water) cups.Spread it in a plate and fluff it up with a fork add a tsp of oil and let it cool down.In a pan heat oil – add garlic, green chillies,garlic – saute for a minute till it turns slightly browned.Then Then add carrot and cabbage in medium high flame, fry till the veggies shrink and raw smell leaves.How to make paneer fried rice - Step1Pin

    Sweet Corn Rice is an easy and quick one pot meal that you make for gettogether or for kids lunchbox. This is a milder version but flavourful and is perfect for kids and ofcourse older kids too haha.

    It is mittus favorite and I pack it for her atleast once a month, I make the same recipe with mixed vegetables too.I pack this sweet corn rice for her lunchbox and make corn pulao for our lunch.I paired it up gobi masala.

    Ingredients

    Basmati Rice – 1/2 cup
    Boiled Sweet Corn – 1/2 cup
    Ginger garlic paste – 1 tsp
    Big onion – 1 small sized finely chopped
    Garam Masala Powder – 1/2 tsp
    Pepper Powder – 1/4 tsp
    Water – 2 cups
    Coriander leaves – 2 tsp finely chopped
    Salt – to taste

    To temper:

    Oil – 2 tsp
    Butter – 1/2 tbsp
    Jeera – 1/2 tsp
    Bayleaf – 1
    Cinnamon – 1/4 inch stick
    Cloves – 2
    Star Anise- 1/2

    How to make Sweet Corn Rice

    1. Soak basmati rice for atleast 15mins then pressure cook with 2 cups of water for 3-4 whistles.Fluff the rice and set aside,Check this post for cooking fluffy basmati rice.In a pan(I used my pressure pan) heat oil + butter – add the items listed under ‘to temper’, let it splutter.How to make Sweet Corn Rice - Step1Pin
    2. Then add ginger garlic paste,saute for few mins then add onion and saute till transparent.Then add required salt,pepper powder and garam masala powder.Fry well.

    3. Then take boiled sweet corn, add it and saute for 2mins.Then add cooked rice and cook covered for 3mins in low flame.

    4. Toss well, garnish with coriander leaves and switch off.

    Expert Tips

    • Soaking rice helps in cooking faster and gives a nice fluffy texture.
    • I used my ultra pressure pan to cook.You ca use nonstick pan or any heavy bottomed pan.
    • Take care to add the spice powders only after the raw smell of onion gg paste leaves.
    • This rice is very mild and less spicy.You can play with spice as you prefer.
    • If you are making it for kids then add the tempering spices(except jeera) while cooking rice, once cooked discard the spices.
    • You can use frozen corn too, I used fresh corn here.
    • You can also make this with leftover rice.

      Hi Sharmiss,
      I must say you are really a good cook. Even a simple dish did not loose colour and texture, for example this rice doesn't look pressure-cooked and capsicum has crisp texture. I feel like eating a lunch at your home. 😉
