Zafrani chai recipe a popular tea made using saffron. It is very popular in Dubai.

Zafrani chai recipe with step by step pictures and video.  It is also called as Kesar chai. Zafrani or Saffron tea is available in many restaurants there like Filli cafe, Pista house etc.

Generally tea is a beverage popular in many hillstations as it is so soothing for the chillness. I love trying different flavours of tea so when I saw this in a whats app forward from a  shop in Dubai, I was tempted to try it. Trust me it has such a refreshing taste with a slight hint of saffron, I loved it. In brief, zafrani chai is a simple spiced tea with saffron flavour.

How to make zaffron chai:

There are 2 ways to make zafrani chai:

Method 1 : This is the method I have shared here as in shops. First make a tea decotion along with cardamom,tea powder and water in a sauce pan. Simmer for few mins until it reduces to half. In a seperate sauce pan, boil milk simmer it along with sugar and few strands of saffron. Now strain both the tea concentrate and saffron milk, mix well and serve hot.

Method 2: First make a decotion along with saffron, cardamom,tea powder and water in a sauce pan. Simmer for few mins until it reduces to half. Now add milk together with sugar and let it boil, give a rolling boil and switch off. Strain and serve hot!

I have tried both methods, however I would strongly recommend method 1 as it has more kesar flavour.

Variations:

  • In addition, you can make zafrani chai with whole spices like cinnamon,cloves and make masala zafrani chai.
  • For vegan option skip milk and replace it with almond milk or soya milk or cashew milk.
  • You can add milk and saffron along with tea concentrate, wait for boil then strain altogether . But adding concentrate and saffron milk seperately is a method they follow in shops.
  • You can replace white sugar with cane sugar too.

Serving Suggestion:

  • Serve zafrani chai with any biscuit like marie biscuits.
  • You can serve it along with any tea time snack like crispy vada, pakora etc.

Ingredients

For tea concentrate:

  • 2 tsp tea powder
  • 1 cup water
  • 2 nos cardamom

For saffron milk

  • 1 and 1/2 cups milk
  • 10 strands
  • 2 tsp sugar

Instructions

  • To begin with first crush cardamom roughly using a mortar and pestle. Set aside for later use.
  • Likewise crush saffron roughly using a mortar and pestle. This is for the flavour to infuse well.
  • To a sauce pan add tea powder along with crushed cardamom.
  • Simmer until it reduces to half. Set aside.
  • To another sauce pan : add milk to it.
  • Let it boil well. Mix well.
  • Add crushed saffron to it.
  • Add sugar to it.
  • Simmer for few mins.
  • Color changes and milk is thickened. Switch off.
  • First strain tea concentrate.
  • Similarly strain saffron milk.
  • Lastly, mix it well.
  • Finally, pour into serving cup and serve hot with few strands of saffron. Serve it soon.

Notes

  • Reduce tea concentrate until half. Otherwise tea will become watery.
  • Use full fat milk for best results.
  • Use freshly crushed cardamom for best flavour.
  • Use metal fine holed strainer.
  • The taste depends on the saffron flavour hence use good quality saffron for best results: It can be seen by the slow changing color.

How to make Zafrani Chai:

11.First strain tea concentrate.strain tea
12. Similarly strain saffron milk. strain saffron milk
13. Lastly, mix it well.mix it well
14. Finally, pour into serving cup and serve hot with few strands of saffron. Serve it soon.pour and serve
Serve hot! To summarize, zaffrani chai is a spiced tea with a flavour of saffron.

My tips while making zafrani chai:

  • Reduce tea concentrate until half then add milk. Otherwise tea will become watery.
  • Use full fat milk for best results, however you can add soya milk , almond milk for vegan option. Add milk at end in that case , do not boil.
  • You can use freshly crushed cardamom for best flavour. In addition you can use crushed ginger too.
  • The taste depends on the saffron flavour hence use good quality saffron for best results: It can be seen by the slow changing color.
  • Straining saffron milk is optional, however to remove malai from tea, I strain saffron milk too.
