Homemade Pulao Masala Powder is so aromatic and flavourful. I wanted to make and post Pulao Masala Powder from scratch when I was making Aloo Bhindi Pulao and finally it happenned. This is a readymade mix that can be used for many dishes including pulao, paratha stuffing, stir fries, fries etc. Do try, make a batch and store it.

About Pulao Masala Powder
Pulao Masala Powder is a fragrant Indian spice blend used to enhance the flavor of pulao, biryani, fries, curries, gravies etc. It adds warmth, aroma, and mild spice without overpowering the dish. The ingredients and measures used differs as per our personal preference.
It is a kind of addiction to me when it comes to make homemade spice mix. Yes I avoid buying it from stores thinking of the additives, preservatives. Also the aroma and flavor is not so good when compared to homemade. This pulao masala powder recipe is very simple and easy to make.
I haven't tasted any store bought pulao masala powder so had no clue of the recipe and ingredients used. When I was browsing came across the pack of MTR pulao masala powder in Amazon, saw the ingredients then tried this spice mix. And it turned out so good that I made another batch to shoot and post here.
Having tried many varieties of spice powders now I have an idea of the measurement. I should say this turned out so good. Not only for pulao you can use it for curries, gravies, masala etc.

Pulao Masala Powder Ingredients
- Coriander Seeds - Forms the base of the masala blend and gives volume.
- Red Chillies - is added for color, spice and heat. You can add regular red chillies or kashmiri chillies.
- Black Pepper, Cumin Seeds - added for heat and flavor, helps in digestion too.
- Whole spices - Cinnamon sticks, green cardamom, bay leaf and cardamom are added.
- Star Anise , Mace, Nutmeg - adds strong aroma and flavor.

How to make Pulao Masala Powder Step by Step
1.To begin with to a pan first add the spices listed under 'for pulao masala'.

2.Dry roast for 3-5 minutes or until it gives nice aroma. No need to wait for color change.

3.Transfer to a plate and set aside to cool.

4.Add it to a grinder and grind it to a fine powder.

Cool down then store in a clean dry container.

- Roasting - Dry roast spices until nice aroma comes. Make sure to dry roast in low flame.
- Grinding - Use a dry mixer jar to grind. Always grind in small batches to retain flavor and aroma.
- Maintaining - Always use a clean dry spoon to keep it stay fresh and dry.
- Storing - Cool down completely before storing. You can store this for at least 3-4 months in room temperature itself.
- Replacement - You can skip red chillies if you prefer and add chilli powder while making pulao. I added very little chillies only while making the spice mix.
- Can be used - for pulao, biryani, paratha stuffing, fries, stir fries, curries, gravies etc.

Use it for curries, pulao, gravies and enjoy the best flavor. Pulao Masala Powder keeps well for about 3-4 months in room temperature itself. If you want to store beyond that refrigerate it and it will keep well for up to a year.

1.What is the difference between biryani masala powder and pulao masala powder?
Biryani Masala Powder is more strong with more masala flavor while pulao masala powder is mild. Though most of the ingredients are same for both the flavor and taste sure differs. It is less intense than garam masala, biryani masala and gives rice a subtle yet rich flavor.
2.How can we use pulao masala for?
You can add pulao masala for curries, gravies, stir fries, salads or making rice dishes like pulao etc.

- 10 nos cloves
- 10 nos cardamom

- 1 no mace
- 1 small piece nutmeg
- 4 nos red chillies
- 2 nos small bay leaf
Instructions
