Pulao Masala Powder Recipe

Pulao Masala Powder is a homemade spice mix used to flavor a Indian rice dish called Pulao or Pulav. This pulao masala makes the pulao aromatic, flavorful and takes it to the next level. This spice mix can be added to curries, stir friesm fries etc so it is multipurpose and handy when you have it ready.Recipe included with step by step pictures and video.

Ingredients

  • ¼ cup coriander seeds
  • 1 tablespoon cumin seeds
  • 1 teaspoon pepper corns
  • two 1 inch cinnamon
  • 10 nos cloves
  • 10 nos cardamom
  • 1 nos staranise
  • 1 no mace
  • 1 small piece nutmeg
  • 4 nos red chillies
  • 2 nos small bay leaf

Instructions

  • To begin first add the spices listed under 'to roast and grind'.
  • Dry roast for 3-5 mins or until it gives nice aroma. No need to wait for color change.
  • Transfer to a plate and set aside to cool.
  • Grind it to a fine powder.I made it for storing for later use. Cool down then store Pulao Masala Powder in a dry airtight container.

Notes

  • Roasting - Dry roast spices until nice aroma comes. Make sure to dry roast in low flame.
  • Grinding - Use a dry mixer jar to grind. Always grind in small batches to retain flavor and aroma.
  • Maintaining - Always use a clean dry spoon to keep it stay fresh and dry.
  • Storing - Cool down completely before storing. You can store this for at least 3-4 months in room temperature itself.
  • Replacement - You can skip red chillies if you prefer and add chilli powder while making pulao. I added very little chillies only while making the spice mix.
  • Can be used - for pulao, biryani, paratha stuffing, fries, stir fries, curries, gravies etc.
