    Pasta recipes are always a hit in this space and my family loves new varieties with pasta so I grab those opportunities. I wanted to make a simple Pasta Salad and when I was browsing for dressing recipes this 1000 island dressing from a cookbook caught my eye , it is very simple and the ingredients were already there in my pantry. Are you like me want to know the name origin of 1000 islands dressing?

    Source : Wikipedia. The name presumably comes from the Thousand Islands between the United States and Canada in the St. Lawrence River. In the Thousand Islands area, one common version of the dressing’s origins says that a fishing guide’s wife, Sophia LaLonde, made the condiment as part of her husband George’s shore dinner.Often in this version, actress May Irwin requested the recipe after enjoying it.And Its been 4yrs since I started Sharmis Passions!! The journey was totally enjoyable and it has been a great learning curve in both aspects of cooking and food photography.Thank you so much to each and everyone of you for the enormous support you have given me all these years.     1000 Island Dressing

    Homemade 1000 Island Dressing is a special dressing used for all types of salads. 1000 island dressing salad will be savoured by all the ages and a right choice for a grand menu in get-together & parties.     Ingredients

    • 1/2 cup pasta
    • 1 tsp olive oil
    • 1 tbsp onion chopped
    • 1.5 tbsp carrot chopped
    • 1 tbsp capsicum

    For 1000 island dressing:

    • 1/2 cup yogurt / mayonnaise
    • 1/2 tsp mustard
    • 1/4 tsp sugar optional
    • 1 tbsp tomato ketchup
    • 1/4 tsp freshly ground black pepper
    • 1/4 tsp green chilli paste optional
    • salt to taste

    Instructions

    • Boil water and add pasta along with required salt and oil.Drain water and keep the pasta aside.
    • Powder mustard seeds to a semi fine powder – I used my hand mortar and pestle.
    • Chop the veggies into lengthwise strips.
    • Mix them with little salt and keep aside.In a mixing bowl – add yogurt,mustard powder.
    • Then add freshly ground pepper powder and chilli paste.
    • Add the pasta, veggies, salt to taste and give a quick stir.
    • Serve 1000 island dressing immediately.

    Notes

    • The original recipe uses mayonnaise, I wanted to make it low fat so used thick yogurt. Also I did not want to get a pack of mayonnaise just for this sake as I am not a fan of it.
    • There are a lot of variations – You can either use pasta, or even any type of legumes like chickpeas, red kidney bean etc along with veggies.
    • You can even make the dressing the previous day and refrigerate it and while serving just toss the other ingredients.
    • Always serve immediately once the salad is prepared to maintain the crunchiness of the veggies.
    • If you prefer more on the sweeter side then add more tomato sauce.
    • The original recipe called for kosher salt, I skipped it and used normal salt.

    How to make 1000 Island Dressing

      I tried this and it was too good! I've made the same salad before with store-bought thousand island dressing. I was skeptical whether the dressing with yogurt would taste the same, but it really matched that taste 🙂 I used mustard sauce(readymade) instead of mustard powder. I also added some zucchini and olives in the salad. It was so yummmmm 🙂

      This is my all time favorite dressing. Tried immediately with a spoonful yogurt, it tastes perfect 🙂
