    Kids love any pasta be it white sauce or red sauce. I am not fond of pasta but spicy pasta is kind of ok to me. Penne Arrabbiata is my favorite as it is saucy and spicy. The mild sweetness from the tomatoes, the hotness from the chilies, the flavor of oregano and juicy pasta was perfect in every bite.

    About Arrabbiata Pasta

    Arrabbiata Pasta is a classic Italian pasta dish made by tossing cooked pasta in arrabbiata sauce. Arrabbiata Sauce is made using 5 basic ingredients tomatoes, olive oil, garlic, chili flakes, parsley etc. ‘Arrabbiata’ in Italian means angry so Arrabbiata Pasta defines the bold spiciness in the dish.

    With just basic and simple ingredients this arrabbiata pasta sauce is a must a try. If you are looking for a spicy hot pasta then this is just right for you. I have used Penne variety of pasta which is most commonly used for Arrabbiata pasta. However you can use other pasta varieties too.

    Arrabbiata Sauce

    Arrabbiata Sauce is a popular Italian sauce that is spicy made using tomatoes, garlic, olive oil, red pepper flakes and parsley. The addition of chili makes the sauce spicy. Homemade Arrabbiata Sauce is very easy and quick to prepare at home.

    Arrabbiata Sauce is made simmering fresh tomato puree along with flavorful, aromatic bold spices along with olive oil. Adding red chili flakes makes the sauce spicy but you can cut down by controlling the measure as per your choice. You can also add parmesan cheese to balance the spice level.

    Adding little more olive oil extends shelf life and you can store and use. This sauce from scratch takes just 30 minutes from start to finish. I use fresh tomato puree, if you use canned puree then it will save more time. I have added tomato paste in addition to make the sauce more strong and flavorful.

    Arrabbiata Pasta Ingredients

    • Penne Pasta – Penne pasta is most commonly used for arrabbiata pasta. However you can use other pasta varieties too.
    • Tomato puree – Just pulse tomatoes in a mixer to a fine puree and use it. You can even use boiled tomato puree or canned tomatoes to make cooking faster.
    • Tomato paste – Tomato paste adds a intense tomato flavor to the pasta sauce.
    • Garlic – Garlic adds a great flavor to the sauce
    • Oil – Olive oil is used which gives a good flavor to the sauce and extends shelf life.
    • Herbs – Mixed herbs, dried basil, pepper powder and chili flakes are used.
    • Salt, Sugar – Salt is added for taste and sugar balances the taste well.

    How to make Arrabbiata Pasta Step by Step

    Cooking Pasta

    1.To a pot add 4 cups of water, add salt to it. I have used durum wheat pasta, you can use any pasta you prefer.

    2.Add 200 grams pasta.

    3.Give a quick mix.

    4.Cook in medium flame. Stir now and then to avoid sticking at the bottom.

    5.Cook until pasta is fork tender.

    6.Reserve around 1/2 cup pasta cooked water. Switch off and remove from flame.

    7.Transfer to a strainer, rinse with water to avoid further cooking.

    Making Arrabbiata Pasta Sauce

    8.To a sauce pot add 2 tablespoon olive oil, heat it up then add 1 tablespoon garlic finely chopped.

    9.Add 1 teaspoon chili flakes and give a quick saute.

    10.Add 1 and 1/2 cups tomato puree. I have used fresh tomato puree here but you can use boiled tomato puree too.

    11.Cook until raw smell leaves.

    12.It takes 7-10 minutes, cook until its thick and moisture is less.

    13.Add 1/2 cup tomato paste along with salt to taste, 1/2 teaspoon sugar, 1 teaspoon oregano or mixed herbs, 1/2 teaspoon parsley, 1/4 teaspoon pepper powder.

    14.Mix it well and cook for few minutes until oil starts to ooze out at the edges. Add 1 tablespoon extra is if it is too dry.

    15.Pasta sauce is ready. Cool down completely then store in a dry glass jar if storing.

    16.Add cooked pasta.

    17.Add reserved pasta cooked water.

    18.Toss well until the sauce coats well.

    Arrabbiata pasta is ready to serve. Serve hot with toasted bread!

    Expert Tips

    • Cook pasta until al dente do not over cook or under cook.
    • You can even add whole tomatoes chopped finely or use tomato puree.
    • Cook pasta until its soft yet firm enough to bite, don’t overcook it
    • If you get fresh basil leaves or parsley, then add it. I used dried parsley.
    • You can even use grated cheese for garnish. Parmesan cheese is traditionally used for penne arrabbiata.

    Serving and Storage

    Serve it hot with garlic or plain toasted bread or herbed bread. I served it with homemade wheat bread toasted in butter. Sprinkle Parmesan cheese as garnish.

    I would recommend to consume it fresh. In case you want to store, make the sauce separately store in fridge then mix it with pasta while serving. Arrabbiata Sauce keeps well in fridge for about a month if handled properly. If you are planning to store add an extra tablespoon oil while cooking the sauce.

    1.Which pasta variety is best to use?

    Penne pasta variety is most commonly used for arrabbiata pasta however you can use, Spaghetti, Bucatini, Tortiglioni, Fusilli, Rigatoni etc.

    2.How long can I store arrabbiata sauce?

    Arrabbiata sauce keeps well in fridge for about a month.

    3.I don’t have tomato paste, Can I skip it?

    Yes you can skip it and add more fresh tomato puree instead. You can also replace fresh tomato puree with canned tomato puree.

      how to cook pasta to a correct form? i always overcook it and it becomes soggy.

        The timing will not work as timing to cook for each pasta differs….Just keep checking the pasta while cooking…Keep cooking until its soft yet firm enough to bite.

      One doubt sharmee.. Is it safe to use glass bowl directly on the stove top ? I heard it will get burst out or break. Are you using any special variety of glass bowl that which is safe on direct stove tops ?

        The one I use is Borosil glassware which is designed specially to be used both in stove and oven, so no issues

      I tried cooking this recipe yesterday, the tomato sauce was watery even thou I left it for 3 mins or so to cook it…how do I make thick pasta sauce?

        It happened to me as well. Instead of just blanching the tomatoes I boiled them for a little while and it absorbed water. The puree became watery, hence the sauce took a look a longer time to cook.
