    Will anyone be surprised when I say that I’ve tasted tacos for the first time only 2months back? Hope I am not alone 🙂 I had tacos in a restaurant in the buffet lunch served and totally loved it.

    About Mexican Tacos

    Tacos is a crispy snack made with taco shells and red kidney beans filling and cheese. It can be served as a snack or starter. The crispness in the tacos, the crunch of the onions and sauce compliments well with the beans making it a perfect starter.

    I was even more surprised to know there is a separate tacos shell maker when I googled. But I have an alternate of making the shells using the tart pans as I saw in that restaurant.

    Coincidentally when I saw the pack of tacos shells in a nearby supermarket with no second thought I took it , followed the recipe at the back of the pack and made a simple salsa to go with these tacos. This is a perfect mild starter – totally my kind.

    Mexican Tacos Ingredients

    • Taco shells – You can use homemade taco shells or use store bought ones just like I did.
    • Red kidney beans – A filling is prepared using red kidney beans, onion, tomatoes, sauces etc.
    • Cheese – You can use grated cheese or mozzarella cheese.
    • Others – Cumin seeds, tomato sauce, black pepper are used.

    How to make Mexican Tacos

    1. Soak rajma in water overnight for at least 6-8 hours. Pressure cook rajma for 5 whistles until soft. Set aside.
    2. Heat olive oil in a pan add cumin seeds allow it to crackle. Then add onions, sauté till slightly browned.
    3. Then add the cooked rajma, pepper powder, tomato sauce, required salt and mix well. Once the rajma is well blended and is saucy, switch off. Sprinkle lemon juice and keep aside. Kidney Bean Salsa is ready.
    4. Now to assemble the tacos with salsa : Take a tacos shell, add a heaped spoonful of prepared kidney bean salsa to it. Grate the cheese to cover the salsa and sprinkle little pepper powder.
    5. Microwave it in high for 1minute – this was mentioned in the carton. In my OTG I kept in bake mode and baked for 2 minutes at 200 DEG C till cheese slightly starts melting.

    Expert Tips

    • You can also add chunky tomato pieces, lettuce or even capsicum for the salsa.
    • The variation is endless you can also garnish it with coriander leaves
    • Adding bean is purely your choice – You can also add corn with any bean of your choice in the salsa.

    Serving and Storage

    Serve tacos with salsa or cheese sauce the best. Serve it hot or warm. I would recommend making it hot and serving it fresh.

    Ingredients
