    • Poppy seeds - Poppy seeds are added for crunch and unique flavour and it gives small bite in cookies. You can reduce little if you want less bite.
    • Lemon juice - Lemon juice adds tangy taste and fresh flavour to the cookies. It also balances the sweetness.
    • Lemon zest - Lemon zest adds strong citrus flavour and aroma to the cookies and it brings more freshness in taste.
    • Baking powder - Baking powder helps the cookies to rise little and gives light texture. It also helps in baking evenly.
    • Oil - I used oil in this recipe and it keeps the cookies soft inside. You can use melted butter also for rich taste.
    • Salt - Salt is added in small amount and it balance the sweetness and flavour. Do not add too much as it may change taste.
    • Ice water - Used ice water to bring the dough together and make it soft. Add little by little to get right consistency.

    How to make Lemon Poppy Seeds Cookies Step by Step

    1.Measure and add wheat flour to a mixing bowl. Add baking powder and salt. Add black poppy seeds.

    2.Whisk it and set aside,In another mixing bowl add oil, powdered sugar.

    6.Cling wrap and chill it for at least 30 minutes. Roll out the dough to ¼inch thickness and cut out cookies using your favourite cookie cutter.Meanwhile preheat oven at 180 deg C for 10 minutes.

    7.Collect the extras again roll out. Repeat to finish. Arrange in a baking tray with butter paper laid. Bake in preheated oven at 180 deg C for 10-12 minutes or until the edges start to turn golden.

    Cool down completely then store.

    • Using lemon zest - I usually add fresh lemon zest for better flavour and smell. Do not add too much as it may turn little bitter in taste.
    • Dough consistency - I make sure dough is soft but not sticky while mixing. Add water little by little to control it properly.
    • Chilling dough - I keep dough in fridge before rolling and it helps in handling. This makes shaping more easy.
    • Rolling thickness - I roll dough evenly so cookies bake properly at same time. Too thin may make it too crisp and hard.
    • Baking time - I watch edges while baking and once it turns light golden I remove it. It helps to avoid over baking.

    Serving and Storage

    Serve this with tea or coffee for a light snack at home. It is good for evening time and it feels easy to eat and not heavy. Store leftover cookies in an airtight container and it stay good for few days.

    Yes you can use plain flour and it will give more light texture. It still works fine in this recipe.
