    Jeera Biscuits is a savoury, crunchy cookie made by blending flour with pepper & salt and baking it. Jeera Biscuits also called Cumin Cookies is a perfect idea for snack at home and a healthy alternate to the store bought biscuits.Cumin Biscuits Recipe
    Cumin Cookies were the first few cookie recipes that I tried in my oven and succeeded in my first attempt itself.The taste of the cookies still lingers that I wanted to bake them again but this time as biscuits with a crispier texture as the major difference I find between cookies and biscuits is in the texture.These biscuits again were on an experiment mode but glad that it turned out to be a keeper recipe.You can even use this as a base recipe for plain whole wheat cookies, just add any flavouring you like.

    Jeera Biscuits | Cumin Cookies

    Jeera Biscuits is a savoury, crunchy cookie made by blending flour with pepper & salt and baking it. Jeera Biscuits also called Cumin Cookies is a perfect idea for snack at home and a healthy alternate to the store bought biscuits.

    Ingredients

    • 1/2 cup maida / all purpose flour
    • 1/2 cup wheat flour / atta
    • 1/2 tablespoon pepper powder
    • 1 tablespoon cumin seeds
    • a pinch baking soda
    • salt to taste
    • 1/2 teaspoon sugar
    • 3 tablespoon oil
    • 1/4 cup milk as reqd to knead to a stiff dough

    Instructions

    • In a bowl, mix the flour, baking soda, sugar, salt and oil.
    • Add the milk and knead to a stiff dough till its not sticky.
    • Roll the dough to about 2mms thick, but this didn't work out for me as I cudn't roll it evenly so what I did was to press it in the roti maker, this way it was easy and quick!
    • Using a cookie cutter cut into round shapes, I used a lid to cut it.
    • Now bring together the remaining scrapings, roll out again and repeat the process till the entire dough gets over.
    • Pre heat the oven at 180 deg C for 10mins.
    • Grease the baking tray, arrange the cookies and place the tray in the center of the preheated oven and bake for 20mins.
    • Jeera Biscuits ready!
    • Remove the cookies from the oven, allow it to cool and then store Jeera Cookies in an air tight container.

    Jeera Biscuits Recipe Step by Step

    1. Take wheat flour in a mixing bowl add baking powder and salt to it, mix well.Then add chilled butter and powdered sugar.Break butter with your finger tips and rub it with the flour till it remblems breadcrumb like texture.Then add cumin seeds and mix it.How to make Cumin Biscuits Recipe - Step1
    2. Now add milk little by little to  form a dough, not too tight more like our chapathi dough.

    3. Cling wrap it and refrigerate for atleast 15mins.Using a rolling pin roll the dough slightly thin to 1/8 inch thickness.Use a butter paper underneath to avoid sticking.

    4. Preheat oven at 180 deg C for 10mins.Use a cookie cutter and cut into small shapes.Gather the remaining dough and roll again,cut with cookie cutter and repeat the process until the whole dough gets over.Bake in preheated oven for 18-20 mins or until the edges start to brown.Cool in wirerack.

    Cool down and then store in airtight container.Serve warm with a glass of milk or as a tea time snack.

    Expert Tips

    • Use only chilled butter for this recipe, I used homemade butter.
    • You can add full maida or use half and half of maida and wheat flour.
    • Do not overbake the biscuits will become hard.
    • The variations to this recipe is endless,replace jeera with ajwain or add vanilla essence or add choco chips or add some spice powders and skip sugar etc.
    • Refrigerating for a while avoids spreading of cookies while getting baked.
    • I got around 25small cookies.
    • The baking timing depends on the cookie size and thickness.If you are making a slighter thicker cookie then it might take atleast 20mins to get baked fully, so adjust the timing accordingly.Mine got done in 15mins.
    • These biscuits are mildly sweet, if you prefer more sweeter biscuits then add 1/2 cup powdered sugar for 1 cup of flour.

        You can use baking soda but the biscuits will not be as crispy as the ones with baking powder…..

      Nice recipe Sharmi, surely it will be more useful for kids snack box instead of store bought one's mainly all are fully maida. Photographs are showing the crispy feeling so exactly. Shall we make in Microwave oven with Convention – baking mode? or only in Cake Oven it is possible? Please clarify.

      Hi . I have morphy Richards 28rss oven , which has modes like bake,toast,warm etc . Can you please suggest which mode to be used for cookies .
      I have always failed at baking cookies , they either get burnt from bottom or become too hard..

      Hi Sharmi..I tried this recipe yesterday and the cookies turned brown in the bottom and it was soft in the top, even after cooling down.. but the taste was good.. I measured all the ingredients with standard measurement cups and spoons.. please let me know what would have gone wrong..

        Always keep in middle rack for baking…timing depends on each oven so keep an eye
