    Todays menu is a south indian lunchbox with peanut rice,carrot stir fry and vadam. I am sure most kids will like peanuts and carrots so thats the combo for today…..also peanut rice is flavourful so a mild subtle stir fry will pair very well with that…and color vadams to bite inbetween 🙂

    The main challenge we face while packing lunchbox for kids is to satisfy kids demands else the lunchbox returns right back untouched…But at the same time make sure we are ontrack to include healthy items too atleast hidden……Waiting to see the lunchboxes empty is every mothers wish….though it doesnt seem to happen everyday, the distant dream remains the same…and now thats a everyday battle between kids and mothers.

    Kids Lunch Box Menu 8 - Peanut rice, Carrot Stir Fry & Vadam

    Kids Lunch Box Menu 8 - Lunch Box Recipe Combo for kids which are nutritious & delicious and at the same time quick & easy to cook for moms. Peanut Rice, Carrot Stir Fry and Vadam is a wonderful combination of nuttier & creamy peanuts, healthier carrot and crunchier vadam.

    Ingredients

    Kids Lunch Box Menu

    • Peanut Rice
    • Carrot Stir Fry
    • SagoVadam / Killu Vadam

    Notes

    • You can make the spice powder for peanut rice the before night itself and refrigerate it.
    • As we are roasting coconut well, it will not get spoiled easily.
    • Grate carrot and store it in clean containers and refrigerate it. In the morning just make rice, mix with the peanut spice powder and temper it…your peanut rice is ready.
    • Then carrot poriyal gets done in just few mins , meanwhile you can fry the vadams.
