    Carrot Rice is a healthy, delicious meal made using rice, carrots, tempered spices and herbs. Carrot Rice also called as Carrot Sadam is an easy and quick to make one pot meal perfect to pack for lunch box for school and office goers. It is packed with flavor and aroma, it will be filling too so do try and enjoy. With my video and step by step instructions you will find it easy to make.

    Carrot Rice is one of the best lunchbox for kids and elders as well. Make this easy and quick one pot dish that can be served with papad or fryums. I am sure this will be liked by all, even kids who are not fond of carrot rice will love this. Do try this flavor packed meal and enjoy!

    About Carrot Rice

    Carrot Rice is made by tempering whole spices then cooking it along with onion, carrots, spice powders then mixing it with cooked basmati rice. Carrot Rice is a flavorful and delicious one pot meal that can be perfect to pack for lunch box. It is full of flavor and colorful too, so even kids would demand for it .

    I remember eating Carrot Rice as a school going kid. It was one of the regular variety rice amma packs for lunchbox. Those days I was really not fond of variety rice but now the situation is totally reverse I can have variety rice even daily, it is sure better than the usual meal combo with sambar and rasam.

    Carrot Rice is best for kids lunch box so do try this healthy rice for your kids. One of the best things I love about carrot rice is the crunch of the carrots and nuts. Amma adds cashews so I wanted to recreate the same but you can replace it with peanuts too.

    The mild sweetness of carrot along with the flavor of spices is kids friendly making this rice a kids favorite one. I add ghee with oil when I prepare Carrot rice and the taste is so good.

    Carrot Rice goes well with any vegetable fry, papad, vadagam, and raita. Usually I make fry – Potato fry as side dish for lunch box and raita when I prepare it in home. full boil & omelette is a nice side dish for Carrot Rice.

    Carrot Rice Ingredients

    • Carrot – Fresh grated carrot is recommended for this recipe. Carrot can also be finely chopped and used if you are not comfortable with grating. You can even use red carrots.
    • Rice – You can use either raw rice or basmati rice. You can even use ponni boiled rice which we use for regular white rice. I made with basmati rice and it gave a pulao feel!
    • Whole spices – A tempering is made using cinnamon, clove, cardamom, cumin seeds, curry leaves and green chili.
    • Spice powders – I have used red chili powder and garam masala powders.
    • Ginger garlic paste – adds flavor to this dish.
    • Coriander leaves – adds freshness and flavor to this dish.
    • Oil, Ghee – I used both ghee and oil. You can make it entirely with oil or ghee. Use peanut oil or any cooking oil.

    How to make Carrot Rice Step by Step

    1.To a pan add 1 tablespoon oil, 1 tablespoon ghee. Add 10 to 12 cashews fry until golden brown, remove and set aside.

    2.To the same pan add 1 one inch cinnamon, clove, 1 cardamom then add 1/2 teaspoon cumin seeds let it splutter.

    3.Add few curry leaves and 1 green chili let it splutter.

    4.Add 1/3 cup chopped onion, 1 teaspoon ginger garlic paste and salt to taste.

    5.Saute until it turns golden.

    6.Add 1 cup grated carrot.

    7.Saute for 2-3 minutes or until raw smell leaves.

    8.Cook covered for 2-3 minutes.

    9.Open give a quick sauté then add 1/2 teaspoon red chili powder, 1/2 teaspoon garam masala powder.

    10.Saute for a minute.

    11.Add 1 and 1/2 cups cooked basmati rice.

    12.Add fried cashews along with 1 tablespoon coriander leaves.

    13.Give a quick sauté and switch off.

    Serve with papad or fryums and enjoy!

    Expert Tips

    • Tempering – While tempering adding ghee with oil adds flavor to the dish. If you don’t want whole spices flavor just temper with mustard seeds and cumin seeds. replace garam masala powder with sambar powder.
    • Rice variety – You can use raw rice or basmati rice or use regular cooking rice.
    • Cooking rice – I use 1 cup rice : 2 cups water ratio. You can even cook rice using straining method. Make sure to cook rice grain separated.
    • Oil – Use peanut oil or any cooking oil.
    • Carrots – You can grate and use or use finely chopped carrots. Use fresh carrots for best taste.
    • Nuts – Instead of cashews, you can even add ghee fried peanuts.
    • Others – You can add capsicum along with carrots if you like the flavor.

    Serving and Storage

    Carrot Rice is a good lunch menu at home and as well for lunch box. It could be made early in the morning and it would be good till late afternoon. If refrigerated it will stay good for 1 day.

    FAQS

    1.What rice can I use?

    Basmati rice is preferred for carrot rice. However you can use regular cooking rice or raw rice too. Make sure to cook rice with grain separated.

    2. Can I add other nuts?

    Yes – we can add roasted peanuts along with cashews to make the rice more nutty and crunchy.

    3. Can I use left over rice for making Carrot Rice?

    Yes – we can use left over rice /carrots for making carrot rice. It will be equally good.

    Ingredients

    • around 12 cashew nuts
    • 1/3 cup onion
    • 1 teaspoon ginger garlic paste
    • 1 cup grated carrot (loosely packed)
    • 1/2 teaspoon red chili powder
    • 1/2 teaspoon garam masala powder
    • salt to taste
    • 1 and 1/2 cups cooked basmati rice
    • 1 tablespoon coriander leaves

    To temper

    • 1 tablespoon oil
    • 1 tablespoon ghee
    • 1 one inch cinnamon
    • 1 clove
    • 1 small cardamom
    • 1/2 teaspoon cumin seeds
    • few curry leaves
    • 1 green chili
