To a pan add 1 tablespoon oil, 1 tablespoon ghee. Add 10 to 12 cashews fry until golden brown, remove and set aside.
To the same pan add 1 one inch cinnamon, clove, 1 cardamom then add ½ teaspoon cumin seeds let it splutter.
Add few curry leaves and 1 green chili let it splutter.
Add ⅓ cup chopped onion, 1 teaspoon ginger garlic paste and salt to taste.
Saute until it turns golden.
Add 1 cup grated carrot.
Saute for 2-3 minutes or until raw smell leaves.
Cook covered for 2-3 minutes.
Open give a quick sauté then add ½ teaspoon red chili powder, ½ teaspoon garam masala powder.
Saute for a minute.
Add 1 and ½ cups cooked basmati rice.
Add fried cashews along with 1 tablespoon coriander leaves.
Give a quick sauté and switch off.
Serve with papad or fryums and enjoy!
