    Carrot Ladoo is a simple and delicious sweet made using grated carrots, ghee, condensed milk and nuts. This recipe has soft texture and mild sweetness with natural carrot flavour. It is little different from other ladoo recipes because it does not need much cooking time or many ingredients. The taste comes rich and slightly moist inside.

    This recipe is usually made for small occasions or when you want quick sweet at home. It takes very less time and can be prepared easily without much effort. The carrot gives natural color and also makes it feel healthy. You can keep this recipe simple and still get good result.

    About Carrot Ladoo

    Carrot Ladoo is a quick variation of traditional ladoo where grated carrot is cooked and shaped into balls. In this recipe carrot is sautéed in ghee and then cooked with condensed milk until it becomes thick. It does not need separate sugar because condensed milk gives enough sweetness and richness.

    The texture of this ladoo is soft and little sticky. Carrot becomes soft when cooked and mixed well with condensed milk. Ghee adds richness and helps in shaping the ladoos easily. Nuts added on top gives little crunch and extra taste.

    There are few variations you can try in this recipe. You can also add cardamom powder for more flavor or mix different nuts for topping. Also people also add milk powder to make it more richer. You can adjust the sweetness by adding more or less condensed milk as per your taste. It is easy to make and everyone at home like it.

    I usually make Carrot Ladoo when I have fresh carrots at home and want to prepare a quick sweet. This ladoo is healthy with the goodness of carrots and is relished to celebrate special occasions.

    Carrot Ladoo Ingredients

    • Carrot - I have used grated carrot as main ingredient for this recipe. It give natural sweetness and soft texture after cooking.
    • Ghee - I added for sauteing the carrot. It adds rich flavor and help cook the carrot well, 
    • Condensed Milk - I just added for sweetness and creamy texture, it help bind the mixture together.
    • Pistachios - I used for topping. It give slight crunch and also make it look good, you can also use cashews or badam.

    How to make Carrot Ladoo Step by Step

    1.Heat ghee, add grated carrot and saute in low flame.

    2.Keep sauteing until it shrinks and raw smell leaves.It will take at least 10 minutes in low flame. Now add condensed milk.

    3.Keep cooking in low flame until it turns into a sticky mass.

    4.Add ghee and keep cooking until it forms a thick mixture. Switch off and let it warm for a while.

    5.Shape them into small balls and dip each ladoo into the nuts mixture. Arrange them in small cupcake liners and serve.

    Expert Tips

    • Cooking carrot - I usually saute the carrot in low flame till raw smell goes. If it is not cooked well the ladoos may have raw smell of carrots.
    • Consistency - I cook the mixture till it becomes thick and little sticky. If it is too loose shaping ladoos will be difficult.
    • Adding ghee - I add little ghee at the end also for better texture. It helps the mixture come together nicely.
    • Shaping - I just let the mixture cool little before shaping into ladoos. Too hot mixture cannot be handled.
    • Flavor variation - You can add some saffron or cardamom powder for extra flavor if you like, it gives nice aroma to the sweet.

    Serving and Storage

    Serve Carrot Ladoo as a sweet for small occasions or after meals. This goes well as a quick homemade dessert. Store in airtight container at room temperature for a day or two, you can also refrigerate for 3-4 days.

    FAQS

    1.Can I use sugar?

    Yes you can use sugar but the taste and texture will be little different. Condensed milk gives more creamy result.

    2.Why is my mixture not thickening?

    It may need some more cooking time in low flame. Keep stirring till it becomes thick and sticky.

    3.Can I add more nuts?

    Yes you can add more nuts as per your liking. It gives more crunch and flavour.

    4.Can I make this in advance?

    Yes you can prepare and store in fridge for few days. It stays good if stored properly.

    5.Is this recipe healthy?

    It has carrot which is good but also has condensed milk. So you can have in moderate amount.

    • 1 tablespoon melted ghee
    • ⅓ cup condensed milk
    • 1 tablespoon pistachios chopped

    Instructions
