    About Boondi Raita

‘Boondi’ means small deep fried droplets of fried batter. Boondi is a savory snack made by frying droplets of besan batter until crisp. Boondi Raita is made by mixing yogurt, boondi with spices.

Boondi Raita pairs up well with roti, paratha, biryani, pulao etc. The most commonly made raita at home is either cucumber raita or onion raita. But I love boondi raita with aloo paratha the best so I try to make boondi the previous day and make raita the next day.

    Boondi Raita Ingredients

    • Yogurt – Use thick curd for making best creamy and delicious boondi raita.
    • Boondi – Use fresh kara boondi that is crisp.
    • Spice powders – Chat masala powder, pepper powder, kashmiri red chili powder are used.
    • Coriander leaves – Coriander leaves adds a nice flavor to the raita.

    Expert Tips

    • Serve immediately after making else the boondis will absorb the curd and it will become soggy. But if you like your boondi soft then you can mix and keep it resting for a while.
    • I love chat masala powder sprinkled than mixing with the raita.
    • You can soak boondi in warm water for 1 minute, squeeze out the water, then use it for raita. This can be done to remove excess oil.

    Serving and Storage

Boondi Raita can be served with rice, roti, paratha, pulao, biryani etc. This raita is best when consumed fresh else the boondis will become soggy.

Raitas are my favorite. I wanted to make boondhi raita when I made boondhi sometime back, but the boondhis just vanished in a few minutes :). Looks lovely Sharmi.
