1.Clean the greens and remove the root part and wash the leaves well.Keep aside.Heat oil in a pan add mustard seeds, urad dhal – let it splutter.Then add green chillies, onion fry till slightly browned.
3.The greens will let out water so be careful in sprinkling water. Add a pinch of sugar to retain the green color while getting cooked.Once the greens become soft and gets cooked add coconut and switch off. Give a quick stir and transfer to serving bowl.
- Adding sugar retains the green color of the veggie while getting cooked.
- Raw coconut is of no cholestrol so I always add coconut and immediately switch it off. But if you are packing then saute the coconut for 2mins then switch off to avoid getting spoiled.
