Keerai Poriyal Recipe

Ingredients

  • 1 small bunch keerai
  • 1 small sized onion
  • 3 tablespoon grated coconut
  • ¼ teaspoon sugar
  • salt to taste

To temper :

  • 2 teaspoon oil
  • ½ teaspoon mustard seeds
  • ½ teaspoon urad dal
  • 1 green chilies

Instructions

  • Clean the greens and remove the root part and wash the leaves well. Keep aside. Heat oil in a pan add mustard seeds, let it splutter then add urad dal saute for a minute. Then add green chilies, onion fry till slightly browned.
  • Then add the greens with required salt. Keep in medium flame and keep stirring until the greens reduce in volume , sprinkle little water. Keep closed and allow the greens to cook.
  • The greens will let out water so be careful in sprinkling water. Add a pinch of sugar to retain the green color while getting cooked. Once the greens become soft and gets cooked add coconut and switch off. Give a quick stir and transfer to serving bowl.

Notes

  • Adding sugar retains the green color of the spinach while getting cooked.
  • Raw coconut is of no cholesterol so I always add coconut and immediately switch it off.
  • But if you are packing then sauté the coconut for 2 minutes then switch off to avoid getting spoiled.
