    About Gobi Pepper Fry

    Cauliflower Pepper Fry is made using cauliflower, pepper, onion, spices and herbs. It is very easy and quick to make for lunch to pair up with or even with roti. You can serve it with sambar rice or rasam rice or even curd rice as it goes well with all rice varieties and even plain phulka.

    Few weeks back on a friday when I was already set in for the weekend mood, I had nothing planned but suddenly had the urge to click something after sending mittu to school. I had cauliflower in hand, so quickly browsed around the chettinad cookbook and made this recipe. Pulled the props that my hands could grab easily from the heap of props and shot this.

    Cauliflower Pepper Fry Ingredients

    • Cauliflower – Choose a cauliflower, clean it, add it to warm water to remove worms if any.
    • Masala powder – Cinnamon, cloves, pepper, cumin seeds, coriander seeds and red chilies are sauteed and grind to a slightly coarse powder.
    • Onion – Onion is chopped and sauteed.
    • Turmeric powder – Turmeric powder is added for color and flavor.
    • Tempering – Oil is heated, mustard seeds is spluttered then curry leaves and garlic is added.

    How to make Cauliflower Pepper Fry Step by Step

    1.Dry roast the ingredients listed under ‘to roast & grind’ till nice aroma rises. Cool down and grind it to a slightly coarse powder – I used my hand mortar and pestle to do this .Cut cauliflower into small florets soak it in slightly warm water for few mins, drain water and boil cauliflower along with turmeric powder and salt until it becomes soft.

    2.Drain water and add half of the roast & ground powder to cooked cauliflower and marinate it for 15 minutes. Heat oil in a pan – add the items listed under ‘to temper’ let it splutter then add garlic, onion and fry till it turns golden brown.

    3.Then add marinated cauliflower and sauté for 2 minutes. Add remaining spice powder and sauté for few mins until the cauliflower is nicely coated with the masala. Switch off.

    Serve with hot rice and sambar or any kuzhambu of your choice.

    Expert Tips

    • It is a must to cut the florets a bit small only then the masalas get blended well with the veggie.
    • This is little spicy, so adjust red chilies according to your spice level.
    • You can even grind the spice powder in bulk and use it whenever you want but freshly ground spices always gives great flavor.
    • Usually for other veggies, if I am cooking them separate I reserve the cooked water and add it while making the curry. But for cauliflower, I drain them to get rid of worms and even the pesticides as cauliflower has those high risks.

    Serving and Storage

    Cauliflower Pepper Fry can be enjoyed with rice or roti. It keeps well in fridge for 1 day reheat and serve it.

    Ingredients

    • 3/4 cup cauliflower florets
    • 1 small sized big onion finely chopped
    • 1/4 teaspoon turmeric powder
    • salt to taste
    • To temper
    • 2 teaspoon oil
    • 1/2 teaspoon mustard seeds
    • 2 cloves garlic finely chopped
    • a small sprig curry leaves

    To roast and grind

    • 1/4 inch piece cinnamon
    • 2 cloves
    • 3/4 teaspoon pepper corns
    • 1/2 teaspoon jeera
    • 1 teaspoon coriander seeds
    • 2 red chilies broken

      I too Plan ahead like, what prop to be used, bg, set up everything i plan the previous night or at least a rough plan in my mind about the pic n presentation for the next day work. But mine was a simple one…liked your neat presentation and very appetizing pics Sharmi!

      Like to try this recipe tomorrow. Instead of roasting and grinding part, shall I add little garam masala, pepper powder and coriander powder ?
