Strawberry kulfi recipe a rich and creamy kulfi with strawberry flavour.I love trying different flavours of kulfi every summer and this is one of the hit kulfi recipes I tried this year.I didn’t add any food color so that color was a bit pale but the taste was just awesome that the kids and her friends enjoyed it so much!

Strawberry kulfi recipe

Strawberry kulfi recipe with step by step pictures.

Ingredients

  • 1 and 1/4 cups milk
  • 10 nos strawberries
  • 1/4 cup condensed milk (I used homemade)
  • 2 tsp cornflour (mix with 2 tbsp water)
  • 3 tbsp sugar
  • 2 drops strawberry essence (optional)

Instructions

  • Take milk in a sauce pan, boil it and simmer for 5 mins.Set aside to cool.
  • Rinse strawberries well, remove the leaf and the center.I saw this technique of using a straw to remove the center part so tried it.
  • Once milk is boiled, add condensed milk.Add water to cornflour and mix well without any lumps.
  • Add cornflour mixture along with sugar.Keep cooking.
  • Once it starts to slightly thicken and coat the laddle,switch off and set aside to cool.Take straw berries in a mixer jar and puree it.
  • Refrigerate the milk atleast for 30 mins then add strawberry puree, mix well.
  • Now add strawberry essence and mix it.
  • Then pour it in kulfi moulds / popsicle moulds…I used my kulfi shaped popsicle moulds.Wrap with silver foil,insert icecream stick then freeze for 6-8 hrs atleast, I always freeze it overnight.Then show the mould under running tap water.Slowly remove the kulfis and serve.

Notes

  • Milk should be completely cooled before starwberry puree is added else it will curdle.
  • Adjust sugar according to the strawberry's sourness.
  • Garnish with strawberry sauce and serve if you prefer.
