About Chocolate Kulfi
Chocolate Kulfi is a variation of traditional Indian kulfi which is usually made with milk and nuts. Here chocolate is added to give a chocolatey twist. It is made by reducing milk, adding cocoa and chocolate which makes it rich. This is a simple recipe you can try at home easily.
This kulfi has rich and creamy texture compared to ice cream. It is not too airy and has a thick bite. The cocoa powder and chocolate chips give strong chocolate flavour and richness. It has a smooth and creamy finish when eaten.
You can try few variations in this recipe, you can add nuts like almonds or pistachios for extra texture and also increase chocolate for more strong taste or reduce for mild version, so this recipe you can adjust based on your liking. Some also add condensed milk for extra sweetness.

- Milk - I used milk as base for creamy texture and richness and it gives good result, you can use full cream milk for better taste.
- Corn flour - Corn flour is added to thicken the mixture and it gives creamy texture and helps to avoid ice crystals.
- Cocoa powder - Cocoa powder adds chocolaty flavour and gives dark colour to the kulfi and you can adjust based on how strong you want.
- Sugar - Sugar is added for sweetness and it balance the cocoa taste and you can adjust the quantity as per your taste.
- Dark choco chips - Dark choco chips adds richness and it melts into the mixture easily and gives more chocolate flavour and you can use regular chocolate also.
- Khoya - I used khoya and it gives thick malai texture, rich taste and you can use store bought or homemade.

How to make Chocolate Kulfi Step by Step
1.Take milk in a sauce pan, boil it then simmer for 5 minutes.

2.To a bowl add coco powder and cornflour. Add sugar and milk.

3.Mix well with a spoon without any lumps. Now add it to the boiled milk.

4.Add khoya(unsweetened) and choco chips.

5.Cook until the mixture turns creamy and coats the ladle as shown. Cool down completely then pour into kulfi moulds.

6.Wrap and cover with foil, freeze it. After 2 hours insert ice cream stick and freeze overnight or at least 6 to 8 hours. Then while serving time, show the mould under running tap water or dip it in a bowl containing water. Carefully pull out the popsicles.

Serve chilled!

- Cooking milk - I usually simmer milk for few minutes before adding mixture. This helps to get better thickness.
- Mixing without lumps - I mix corn flour and cocoa well before adding. It should not have lumps in it.
- Cooking consistency - I cook until the mixture coats the ladle. This shows it is ready to set.
- Freezing properly - I freeze at least overnight for best texture. Less time may not set well.
- Removing kulfi - I run mould under water for few seconds. It helps to remove kulfi easily.
Serving and Storage
Serve this chilled immediately after removing from mould. This goes well as a dessert after meals or for special days. Store leftover kulfi in freezer and use within few days. Keep it covered so it do not absorb smell.

1.Can I skip khoya?
Yes you can skip khoya but texture will be less rich. You can add little cream instead.
2.Can I use milk chocolate?
Yes you can use milk chocolate. It will give more sweet taste.
3.Why my kulfi is icy?
It may be due to less thickening or less fat. Cook mixture properly for better result.
4.Can I add nuts?
Yes you can add chopped nuts. It give extra texture.
5.Can I make it in advance?
Yes you can prepare and freeze earlier. It stays good for few days.
