About Corn Tortilla
This Corn Tortilla is made using maize flour, maida, salt, olive oil and warm water. Traditionally Mexican corn tortilla is made using masa harina flour, water and salt but we need a tortilla maker to press as it breaks when rolled. Masa harina is made from dried corn that has gone through nixtamalization.
‘Masa harina’ translates in Spanish to ‘corn flour’ but it is not the same as the corn flour we used for cooking. Masa harina is not easy to find here so I make it with maize flour combined with flour and corn tortilla comes out super soft. Homemade corn tortillas are super soft and easy to roll and they don’t crack or break at all.

You can use corn tortilla to make quesadilla or use the leftover to make tortilla chips, they taste amazing. I agree this is not the classic corn tortilla recipe but trust me this is so easy and comes out so good.
A tortilla press is required if you are making corn tortilla using just maize flour or masa harina flour. As the flour is gluten free it is tough to roll them. You can use a iron tawa or nonstick tawa to toast the tortilla.

Corn Tortilla Ingredients
- Maize flour – Maize flour or Masa harina can be used for making corn tortilla.
- Flour – Maida is used along with maize flour for making it soft.
- Salt – Salt is added to taste.
- Water – Warm water is added little by little to make a soft dough.
- Olive Oil – Olive oil is added to the dough to make soft and flavorful corn tortilla.

How to make Corn Tortilla Step by Step
1.To a mixing bowl – add 1 cup maize flour, 1/2 cup maida, 1 teaspoon olive oil and salt to taste.

2.Mix this well first.

3.Add water little by little and start kneading.

4.Knead to a soft dough.

5.Roll into 10 small lemon sized balls and slightly flatten it.

6.Dust flour and roll using rolling pin to a thin tortilla.

7.Cut using a lid. This step is optional, I did this to get even sized tortilla.

8.Cut and ready. Repeat to finish. Collect the scrapes and roll again.

10.Heat a dosa tawa – place the prepared tortilla on hot tawa.

11.Cook for few seconds then flip over and cook until golden spots appear here and there on both the sides.

Expert Tips
- If you want to make a gluten free corn tortilla then use only maize flour and skip maida. Place the ball in between plastic sheets and press using a plate.
- If adding only maize flour then add hot water to knead the dough. That way it will be easy to press.
- Do not over cook the tortilla. Just around 40 seconds for 1st side then 35 seconds for 2nd side. Do not keep slipping which makes the tortilla hard.
- Always wrap it in a cloth after cooking them to retain softness.
- Corn tortilla can be used to make chips, nachos, tacos, enchilada, chilaquiles etc.
- Always keep the dough covered to avoid it from drying.
Serving and Storage
Store the corn tortillas wrapped up in a cloth in a container. It keeps well in room temperature for 1 day and in fridge for about 2-3 days. Reheat for few seconds and serve hot.

1.How can I make it gluten free?
Use masa harina flour or just maize flour alone. Add salt and use hot water to knead to a soft dough. Press using a tortilla press or use a plate to press the ball between 2 plastic sheets.
2.Why are my tortillas hard?
Tortilla turn out hard if cooked for long time. Do not flip over and cook for more time which will make the tortillas hard.
