    Rose pudding using china grass or agar agar is a perfect treat for Ramadan or any festival. As its Ramzan is on its way, this rose pudding will be a great addition to the Iftar spread. These puddings are not easy to make, it tastes delicious perfect to serve for kids too.

    About Rose Pudding

    Rose Pudding is a incredibly delicious dessert which can be made very easily. This rose pudding is made to set using a special setting agent called agar agar also called as china grass. It is perfect to add on as an after meal dessert or as a part of Iftar spread.

    China grass or agar agar is a natural body coolant so perfect to use during summer. Agar agar is available in powder form and in strands. Personally I like powder form as it is easy to use and melts quickly. I have given measurements for using agar agar strands too. This pudding is completely vegetarian as it is set using agar agar.

    Though this pudding can be made entirely with milk, the addition of condensed milk makes this pudding rich, silky smooth and delicious. For flavoring I have used rose milk essence which is easily available. You can replace it with rose syrup too but make sure to reduce sugar accordingly.

    To make rose pudding vegan

    To make this Rose pudding vegan replace 2 cups milk with 2 cups almonds milk or cashew milk or oats milk or even coconut milk. But do not boil add it after rose milk extract is added, switch off and mix.

    Agar Agar – China Grass

    Agar Agar comes in 2 forms and I have used both. Agar agar strands are easily available in supermarkets but agar agar powder I have found only online as its not readily available in my place. Agar Agar is also known as China Grass and Kadal Paasi in Tamil.

    • Agar Agar Strands – Strands are good but they need to be cut down into small bits or grind to a coarse mixture for it to dissolve easily, also comes in gram measures so a bit difficult to measure in tablespoon.
    • Agar Agar Powder – Powder easily dissolves and easy to measure too.

    Rose Pudding Ingredients

    • Milk – Use full cream milk which makes the pudding rich and creamy.
    • Condensed milk – Condensed milk is added to make the pudding extra rich adn creamy.
    • Sugar – White granulated sugar is added as sweetener here.
    • Water – Water is needed to dissolve agar agar powder.
    • Agar agar powder – I have used agar agar powder which is easily available in amazon.
    • Rose milk extract – Few drops rose milk extract is used for taste, flavor and color.

    How to make Rose Pudding Step by Step

    1.To 2 cups milk(boiled) add 1/4 cup condensed milk.

    2.Mix this well first and set aside.

    3.This is done OFF THE STOVE – To a sauce pan add 3/4 cup water.

    4.Add 2 teaspoon agar agar powder. If using agar agar strands then 1 cup water with 5 grams agar agar strands.

    5.Whisk it well.

    6.SWITCH ON THE STOVE – Place the sauce pan and let it boil.

    7.Add 1/2 cup sugar to it once it starts to boil.

    8.Whisk it well until sugar completely dissolves.

    9.Add milk + condensed milk mixture which has 2 cups milk with 1/4 cup condensed milk.

    10.Add 1/4 teaspoon rose milk extract.

    11.Whisk it well for even mixing.

    12.Transfer this to a strainer. Discard the remains.

    13.Add in pudding molds.

    14.I poured the remaining in a glass tray. Set in fridge for minimum 1 hour.

    15.Carefully invert to demold.

    16.Cut into small squares.

    17.Remove gently and store in fridge.

    18.For bigger molds, run a knife at the edge.

    19.Invert to demold.

    20.Puddings are demolded beautifully.

    Rose pudding is ready. Serve chilled!!

    Expert Tips

    • Agar Agar sets beautifully in room temperature itself. But to serve the rose pudding chilled refrigerate also setting in fridge fastens the process.
    • Do not add more agar agar than mentioned else the pudding will become hard.
    • The whole mixture should be boiled for the pudding to set evenly. Do not boil rigorously, when it starts to boil and bubbles starts appearing switch off.
    • You can even set it in individual cups and serve it as such. If adding rose syrup add 2 tablespoon rose syrup and 1/4 cup sugar.
    • Be quick after agar agar mixture is strained, whisk it well then immediately pour to set.
    • You can use any flavor following this method. You can even add fruit purees.

    Serving and Storage

    Rose Pudding tastes best when served chilled. It keeps well in fridge for 2 days but lets out water slightly but that does not affect the taste.

    FAQS

    1.Which type agar agar to use?

    You can either use agar agar powder or agar agar strands. Both are easily available online.

    2.How much agar agar to use?

    For every 1 cup liquid 3/4 teaspoon agar agar powder sets it perfect if you use 1 teaspoon you get firm pudding. So roughly for 500 ml milk you may need 5 grams china grass either strands or powder.

    3.Can I skip condensed milk?

    Yes you can skip condensed milk and add 2 and 1/4 cups full cream milk in total.

        You just need to run a knife at the edges and it will come out easily.If its still goey and breaks then there must be some issues with china grass or the measure of it.
