    Rasmalai Recipe – It is quick to make when your homemade rasgullas are ready. Rasmalai is a rich indian delicacy, rasgullas in thickened milk with the slight flavour of sugar syrup and saffron topped with nuts…Its yum combo!! You can check the homemade rasgullas recipe , but you can use store bought ones too for making rasmalai. Do check out bread rasmalai recipe too.

    Rasmalai Recipe

    Rasmalai is a rich Indian delicacy made by dunking rasgullas in thickened & condensed milk & infused with saffron flavour and garnished with chopped nuts. Rasmalai is a yum dessert made on special occasions at home or whenever you make the normal routine a celebration for no reason. Rasmalai Recipe is presented in this post with step by step pictures.

    Ingredients

    • 15 nos rasgullas
    • 3 cups milk
    • 3 tbsp condensed milk
    • 1 tsp ghee
    • 1/2 cup sugar
    • 3 tbsp nuts chopped
    • few strands saffron

    Instructions

    • Take a wide heavy bottomed vessel, grease it with little ghee and add condensed milk + milk. Bring to a boil and reduce to medium flame. Keep stirring till the milk starts thickening and reduced to half.
    • Meanwhile take 2 tbsp of warm milk, add saffron strands and crush it well, keep aside.
    • Now add the saffron milk to the boiling and keep stirring. Then add the sugar and keep stirring. The mixture is called rabri and it tastes divine by itself 🙂
    • Keep in sim and stir it till it reduces in volume. Fry the nuts in ghee and add it to the rabri and mix well. Add cardamom powder and give a quick mix.
    • Now finally add the rasgullas and let it cook in low flame for 5mins till the rasgullas absorb the milk. Switch off , cool completely and then chill it. Rasmalai is ready now. Serve chilled!

    Notes

    • Don't use saffrons more, it will be over powerful and will spoil the taste.
    • The addition of condensed milk not only makes the rasmalai rich but extra tasty and gives a unique flavor to it.
    • You can also use the sugar syrup that comes with the rasgullas and add it to the rabri instead of sugar.
    • Allow at least 30mins sitting and refrigerating time before serving to taste best.

    Method:

    I’ve become a great fan of rasmalai since I tasted it from Annapoorna GowriShankar.Guess they use condensed milk so wanted to give a try at home using condensed milk. Homemade ones are best too if prepared in the right consistency.
    You can also use store bought rasgullas, tinned ones are easy to reach – Haldirams works best.

    My Notes:

    Rasmalai is my favorite eversince I tasted it from Annapoorna Gowri Shankar. Even now whenever we dine there, I end up with this rasmalai for dessert.Sometimes I even order some light dinner and reserve my tummy for this rasmalai. I usually make rasmalai this way, but have always wondered about the taste in sweet shops / restaurants….So I tried a instant version with store bought mini rasgullas and condensed milk and it turned out super yum….It was just perfect! I am sure this easy version can be made when you have guests at home or during festive occasions when you have other works to do so perfect for Diwali time too! :)I loved this terracotta bowl when I saw it in a supermarket….I picked it up at once and the first thing that came to mind was to click rasmalai.

    Ingredients

    • 15 nos rasgullas
    •  1 cup milk
    • 1/2 cup condensed milk
    • 1 tbsp nuts chopped
    • few strands saffron
    • a pinch cardamom powder

    Step by Step Method

    1. Take a pan – add condensed milk to it, add a tbsp of milk and whisk it well.Now add remaining milk and let it boil in medium flame for 5 mins. Keep stirring.Crush saffron strands and add it.The color of milk will change to slightly yellow color, after saffron is added, let it boil for a minute.

    2. Then add chopped nuts, cardamom powder give a quick mix and let it boil.Now take your rasgullas.I used store bought rasgullas this time.

    3. Take lemon squeezer and squeeze the excess sugar syrup from the rasgullas.Be gentle else the rasgullas will crumble.Now add the rasgullas to the milk and let it simmer for 5mins in low flame.Switch off.

    Cool down for few mins, then refrigerate for atleast an hour.Serve chilled!

    Tips

    • You can also use store bought rasgullas, tinned ones are easy to reach – Haldirams works best.I got it from a sweet shop.

      I love rasmalai more than rasgulla as I feel it carries more punch!!Staying quite close to Sree Krishna Sweets and Adyar ananda bhavan has made me a Rasmalai addict!!I tried making it at home once and the rasgullas turned out very hard.Only the ras was edible,let me go through your recipe now!!

      Hi..tried ur rasgulla and rasmalai recipe yday for my mum's bday as rasmalai is her fav sweet.my whole family loved and appreciated it. While the rasgullas and the rabri was yummy, the rabri did nt enter the rasgullas fully and the central part of rasgulla stayed white.any tips for that?was the rabri too thick?i did nt squeeze out the sugar syrup..was it bcoz of that?

        Not really sure what went wrong but make sure to squeeze the rasgullas so that the rabri doesnt become watery….
